Grilled Pineapple-Rum Skewers

cup rum

cup brown sugar

t vanilla extract

large pineapple, peeled, cored, and cut into 1½-inch cubes

vanilla bean ice cream

Directions
- Soak wooden skewers in water for 20 minutes.
- In the meantime, light the coals or preheat the grill to medium heat. Away from the fire, spray grill grate with cooking spray.
- In a small bowl, mix rum, sugar, vanilla, and cinnamon together until sugar is dissolved.
- In a large bowl, combine rum mixture and pineapple and coat well. Let stand for 5 minutes.
- Skewer pineapple and place on grill. Reserve rum mixture. Grill for 10 minutes, turning occasionally. Remove from grill and let pineapple cool for 5 minutes; remove fruit from skewers. Serve in bowls with a scoop of ice cream and drizzle remaining rum-sugar mixture on top.
