peanut pineapple soup

Peanut Pineapple SoupIris flourish

Makes: 6 servings

Ingredients

1

 

medium diced onion

2

 

cloves minced garlic

2

 

T olive oil

1

 

cup diced potatoes

2

 

cups vegetable broth

1

 

can (20 oz) crushed pineapple

3

 

cups sliced Swiss chard

½

 

cup peanut butter

1

 

T Tabasco

½

 

cup fresh minced cilantro

salt to taste

Directions

  1. Sauté onion and garlic in olive oil.
  2. Add potatoes and vegetable broth; bring to a boil, then reduce heat and simmer for 15 minutes.
  3. Add pineapple and sliced Swiss chard; simmer for 10 minutes.
  4. Stir in peanut butter, Tabasco, and fresh minced cilantro; heat for 5 minutes. Add salt to taste. Serves 6.
