Tuscan Grilled Bread & White Bean Salad

Ingredients

bell pepper, seeded and quartered

large onion, sliced into ½" rings
|

¾" slices multi-grain or Italian bread
|

T vinaigrette, bottled or homemade
|

15 oz can cannellini beans, drained and rinsed

large tomato, chopped
|
½

|
cup chopped fresh basil
|
salt

pepper

Directions
- Prepare grill to medium-high heat.
- Brush vegetables and bread with 3 tablespoons of the vinaigrette.
- Grill pepper and onion for 6 minutes, turning occasionally. Place bread slices on grill. Cook until pepper and onion are slightly charred and bread is toasted, about 3 minutes longer.
- Transfer to cutting board and cut into bite-sized pieces.
- Place beans, tomato, basil, and remaining vinaigrette in a large bowl. Toss to coat. Mix in the grilled bread and vegetables. Season to taste with salt and pepper.
