Morning After Waffles in a cast-iron waffle iron

cup all-purpose flour

cup almond meal/flour

1/2

 

t salt

T sugar

t baking powder

t baking soda

cup buttermilk

1/4

 

cup milk

t sunflower oil

eggs

t vanilla

  1. In a medium bowl, combine dry ingredients.
  2. In a small bowl, combine remaining ingredients.
  3. Make a well in flour mixture and add liquid ingredients; whisk until combined.
  4. Pour about 3/4 cup batter into waffle iron and cook for 3 minutes on each side.

Our campfire “Morning After Waffles” are perfect for old-fashioned cast-iron waffle irons, like those designed for use with wood cook stoves. Here are some tips for better cast-iron waffles:

  1. Make sure your iron is well seasoned. Additional cooking spray may be needed between waffles.
  2. Make sure your iron is very hot before pouring in batter. You need a good base of coals in the fire, but if it’s too hot, the waffles will burn.
  3. Don’t open the iron to peek. You may ruin the waffle, and besides, you’re cheating.
