15-ounce can pears in natural juice

cup sugar

T fresh lemon juice

packets ChillOver Powder

cup pecans, chopped

cup heavy whipping cream, whipped to soft peaks

cup sour cream

cup cottage cheese
|
1/2

cup finely grated cheddar cheese
|
Optional: cottage cheese, lemon zest, and caramelized pears for garnish
|
- Drain pears and reserve juice. Cut pears into 1/4-inch pieces and set aside.
- Blend together reserved pear juice, sugar and lemon juice and bring to a boil.
- Reduce heat to medium, sprinkle and stir ChillOver Powder into liquid and cook for 3 minutes, stirring frequently. Remove from heat. Pour into a large bowl.
- Fold in pears and pecans, and set aside for 5 minutes to cool.
- Fold in remaining ingredients.
- Spoon into a 4-cup mold (if you want to unmold this ChillOver, you’ll need to use a flex mold) or serving dish.
- Chill until set, about 2 hours.
- Then, (if unmolding):
- Before unmolding, make sure the ChillOver is completely firm.
- Gently pull it away from the edge of the mold with moistened fingertips.
- Moisten the top of your ChillOver and the serving plate — the moist surfaces make it easier to slide the ChillOver into the exact center of the plate after you’ve unmolded it.
- Turn the mold upside down onto serving plate to remove ChillOver from mold.
- Garnish as desired, and serve.
