Polenta with Herbs & Goat CheeseIris flourish

Makes: 4 servings

Ingredients

3

 

cups water

2

 

cups chicken stock

½

 

t salt

1

 

cup polenta

1

 

T butter

2

 

T finely chopped fresh chives, parsley, and basil (or your favorite herbs)

1

 

t sea salt

4

 

oz goat cheese, crumbled

zest of 1 lemon

Directions

  1. In a large pan, bring water, chicken stock, and salt to a boil. Reduce heat to medium-high and slowly stir in polenta. Whisk constantly for 5 minutes.
  2. Reduce heat to simmer and cook for 15 minutes, stirring often.
  3. If polenta has thickened too much, add ¼ cup water and stir to thin. Stir in butter.
  4. In a small bowl, mix together the herbs, lemon zest, and salt.
  5. Ladle the polenta into four bowls and top with the crumbled goat cheese and the herb mixture.
