Polenta with Herbs & Goat Cheese

Ingredients

cups chicken stock

cup polenta
|

T butter
|

T finely chopped fresh chives, parsley, and basil (or your favorite herbs)

t sea salt

oz goat cheese, crumbled
|
zest of 1 lemon

Directions
- In a large pan, bring water, chicken stock, and salt to a boil. Reduce heat to medium-high and slowly stir in polenta. Whisk constantly for 5 minutes.
- Reduce heat to simmer and cook for 15 minutes, stirring often.
- If polenta has thickened too much, add ¼ cup water and stir to thin. Stir in butter.
- In a small bowl, mix together the herbs, lemon zest, and salt.
- Ladle the polenta into four bowls and top with the crumbled goat cheese and the herb mixture.
