Sweet & Spicy Beef Couscous

lb sirloin steak, trimmed and cut into 1½″ strips

cup honey

cup soy sauce

cup minced apricot (can also use dried apricots or apricot preserves)

t red pepper flakes

t peeled and finely grated ginger root

cup mushrooms, sliced

cup carrots, sliced

cup red bell pepper, cut into 1½″ strips

cup whole-wheat or brown-rice couscous

cup beef broth

cup green onions, sliced
|
Directions
- In a medium bowl, combine beef, honey, soy sauce, apricot, red pepper flakes, ginger, and garlic; mix well.
- In a 10″ cast-iron skillet, cook beef mixture over medium-high heat for about 5 minutes.
- Add veggies and cook an additional 3–5 minutes.
- Add couscous and broth and bring to a boil.
- Turn off heat, cover, and let sit for 5 minutes or until all liquid has been absorbed.
