Ice Cream Bowls

coconut oil

vanilla ice cream or whipped cream

fresh fruit of your choice, sliced

Directions
- In a small bowl, mix together sugar and cinnamon. Set aside.
- In a medium cast-iron skillet, place enough coconut oil over medium-high heat to melt to a ½" depth; heat until oil sizzles.
- With tongs, slide one tortilla into oil. Immediately start to shape the tortilla into a bowl by using two sets of tongs to encourage the sides to stand up. After 1 minute, rotate the tortilla in the pan in order to get all sides fried and spoon some hot oil over the top. This is tricky, but use your creative powers to form it into a bowl shape.
- Remove the tortilla from the skillet and shake off excess oil. Place tortilla on a cooling rack and immediately sprinkle with the sugar-cinnamon mixture.
- Serve tortilla bowls with three small scoops of ice cream and sliced fruit.
