Cabbage Patch Melts

cups cooked quinoa

cups fresh mushrooms, finely chopped

cup walnuts, finely chopped

cups Swiss cheese, grated

large cabbage leaves
|
- Combine all ingredients except cheese and cabbage in a large bowl and mix well.
- Form mixture into small, flat patties.
- Heat oil in skillet and cook patties in two separate batches on medium heat for 3–4 minutes on each side, until golden brown. (This step can be done ahead of time.)
- Place one patty on each cabbage leaf and top with cheese.
- Fold and roll cabbage to enclose filling; “pin” together with a skewer.
- Grill over open fire until hot and cheese is melted, about 4 minutes.
