corn & bacon chowder

Corn & Bacon ChowderIris flourish

Makes: 5-7 servings

Ingredients

1

 

onion, diced

1

 

bell pepper, diced

1

 

stalk celery, diced

3

 

T butter

3

 

T flour

5

 

slices bacon, diced

3

 

cups frozen corn kernels

½

 

t ground cumin

½

 

t cayenne

½

 

t paprika

5

 

cups chicken stock

1

 

cup heavy cream

salt to taste

Directions

  1. Sauté 1 diced onion, 1 diced bell pepper, and 1 stalk diced celery in 3 T butter.
  2. Add 3 T flour and stir for 3 minutes. Then, add 5 slices diced bacon and cook for 2 minutes.
  3. Add 3 cups frozen corn kernels, ½ t ground cumin, ½ t cayenne, and ½ t paprika and 5 cups chicken stock. Bring to a boil, then reduce heat and simmer for 30 minutes.
  4. Stir in 1 cup heavy cream; cook for 5 minutes. Add salt to taste.
