MaryJane's Avocado Ice Cream

Ingredients

large avocado, peeled and diced

cup half-and-half
|
⅔

cup powdered sugar
|

t lemon zest
|
⅓

cup fresh lemon juice

Directions
- Combine avocado, half-and-half, sugar, lemon zest, and lemon juice in a blender. Purée until completely smooth.
- Pour mixture into a 2-quart baking dish.
- Cover and freeze until firm, about 4 hours. (Can be transferred to an air-tight container and kept in freezer for up to one month.)
- Before serving, let stand at room temperature for 15 minutes. Use an ice-cream or watermelon scoop to serve.
- Top with fresh fruit or mango salsa.
