Ham and Lima Beans

Ingredients

cup dried lima beans, soaked overnight in enough water to cover

T oil, divided (we used grapeseed)

lb ham, cubed
|

small potatoes, diced

large carrots, diced

T garlic, finely minced
|

small onion, finely diced

cups water
|
Spice Mix:
1
|
|
t sea salt
|

|
|
t pepper
|
¼
|
|
t ground cumin
|
½
|
|
t paprika
|
¼

t dried rosemary, crushed
|

t dried coriander
|
Directions
- In small bowl, mix together spices.
- Heat cast-iron pot over medium-high heat; add 2 T oil.
- Drain beans; add to oil along with ¼ of the spice mix and cook until beans start to brown, about 10 minutes.
- Add ham, potatoes, carrots, and garlic with remaining oil and ½ of the spice mix; cook for 5 minutes. Add onion and cook for 2 minutes.
- Add water and remaining ¼ of the spice mix, lower heat to medium-low. Simmer for 1½ hours, stirring every 10–15 minutes, and adding extra water if needed.
