Banana Cardamom Bread

cup overripe banana, mashed

|
Directions
- Preheat oven to 350°F. Lightly butter a Lodge-brand “Divided Rectangle Mini-server Pan” (www.lodgemfg.com), then dust with flour.
- In a medium bowl, beat the butter and sugars together with a wooden spoon until smooth and creamy. Beat in the egg, then the banana and vanilla.
- In a separate bowl, combine the flour, baking soda, salt, cinnamon, cardamom, and allspice. Add to the banana mixture and stir until well combined. Fold in the nuts and sour cream—don’t overmix.
- Pour batter into the prepared pan. Bake 25 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from oven and allow to cool in the pan. Remove from pan and serve with butter or cream cheese.
