Yam Soufflé

large yams, peeled and cut into 1″ pieces

cup brown sugar

cup butter, softened

Directions
- Preheat oven to 350°F. Butter an 8″ x 8″ pan or a similar-sized casserole.
- In a medium sauce pan, steam or boil yams for 10–12 minutes or until tender.
- Mash yams until smooth.
- Beat together mashed yams, brown sugar, butter, eggs, salt, and vanilla until fluffy. Place in buttered pan or casserole.
- In a medium bowl, combine topping ingredients. Sprinkle topping over yams.
- Bake for 30 minutes.
