Agua de Horchata (Rice Water)

Directions
- In small saucepan, add rice and 2 cups water. Cover and let boil. Turn heat to low and let simmer until water has evaporated, approximately 10–15 minutes. The rice is now par-cooked (cooked halfway), but not soft.
- Add the rice in two or three batches into a blender with a little water. Pureé completely.
- In the first batch of rice, add honey and ground cinnamon. Add additional water if necessary to blender if puree is too thick.
- Strain puree through a fine-mesh sieve and into a pitcher, adding water to help push rice mixture through. Add 2½ quarts of water and mix. Taste and adjust for sweetness. Serve chilled.
