- Preheat oven to 400°F. Lightly oil a 12-cup muffin tin.
- Combine the dry ingredients in a medium bowl. Set aside.
- Cream butter and sugars and beat until light and fluffy. Add eggs, one at a time, beating well after each addition. Add buttermilk, orange juice, nuts, carrots, apricots, and vanilla; mix well.
- Add the flour mixture and mix just until combined.
- Spoon batter into muffin tins.
- Bake for approximately 25 minutes, until toothpick inserted in center comes out clean.
