Hearty Meatloaf with Ketchup Glaze

cup onion, chopped

large garlic clove, minced

cup soft bread crumbs

cups zucchini, cut into 1″ chunks

cup cheddar cheese, grated

cups mushrooms, chopped

Directions
- Preheat oven to 350°F. Lightly grease loaf pan.
- In a large bowl, combine beef, onion, garlic, bread crumbs, zucchini, salt, pepper, cheese, and eggs; mix well.
- In a medium skillet, sauté mushrooms in butter for 5 minutes. Add wine and cook until the mushrooms have absorbed most of the liquid. Stir into meat mixture; transfer to loaf pan.
- In a small bowl, combine ketchup and brown sugar; mix well. Spread ketchup mixture evenly over top of the meatloaf. Bake for 1 hour.
