Nettle Soup

Makes: 4-5 servings
Ingredients

onion, diced
|

cloves garlic, peeled and minced
|
1
|
|
T coconut oil or olive oil
|

|
potatoes, cubed
|
5
|
|
carrots, sliced
|
2
|
|
qts water or chicken broth
|
colander full of nettle tops
|
salt and pepper to taste
|
sour cream
|
Directions
- In a 4-qt saucepan, sauté onion and garlic in oil until soft. Add potatoes, carrots, and water or broth.
- Simmer, covered, over medium heat until vegetables are tender. Add nettles, cover, and cook until wilted.
- Remove from heat and purée, half at a time, in a blender or food processor. Season to taste. Serve with sour cream.
