Burgers, topped with home canned pickles and lots of goodies.

I really want to make more breads, like burger buns, from scratch. If my kids can get the kitchen cleaned up, I just might make some.

Not sure about a side yet. Possibly sweet potato fries and a salad.

The grocery order came, so finally some more variety! Either sole almondine or pub-style fish and chips (this is what comes of falling for a Brit!). If we have the sole, I'm thinking steamed carrots and organic pasta...and either cheesecake or caramel apple dumplings for dessert.

I can't seem to decide, so I hope the Mister can!

Jess,

Sometimes we buy these oven fried Sweet Potato Puffs :)

http://www.alexiafoods.com/products/sweet-potatoes/sweet-potato-puffs

I have found them at our Wal-Mart and Safeway grocery stores. Alexia brand fries are good in a pinch too!

Tonight my Cousin Nick invited my dad, brother, and I over for potato pancakes like my Gram used to make. They were amazing as usual. We also had sausages and home made apple sauce that my dad made. Very good night!

We ended up having sandwiches and an "indoor picnic" last night. Tonight, I am hoping for something a little more fun to cook!

Hi Farmgirls!

I am a little late posting tonight. Sorry. Thanks to a big lunch, we are having organic hotdogs with organic hot dog buns we found last week at Whole Foods.

Emily - your dinner last night sounded really delicious! Isn't it great to remember past times with a family heirloom recipe?

Margo, here's the recipe you asked for. Enjoy!

Homemade Blondies

2 cups packed brown sugar
2/3 cup butter (about 1 and 1/3 sticks)
2 eggs
2 tsp vanilla
2 cups flour
1 tsp baking powder
1/4 tsp baking soda
1 cup semi-sweet chocolate chips
1 cup nuts (optional)

Grease a 13x9 inch baking pan; set aside.
In medium saucepan, heat brown sugar and butter over medium heat until sugar dissolves, stirring constantly. Cool slightly. Stir in eggs one at a time, and then vanilla. Stir in flour, baking powder and baking soda.

Spread batter in prepared baking pan. Sprinkle with chocolate and nuts. Bake in a 350 degree oven 25 - 30 minutes. Cool slightly on wire rack. Cut into bars while still warm. Makes 36 bars.

Enjoy!

"Pumpkin" Pot roast with potatoes, carrots, onions and all kinds of herbs such as bay, savory, rosemary, etc. Home canned green beans to go along side. YUMMMMM!!!!
The reason I say "Pumpkin" is because that was the name of the cow that we just butchered and put in the freezer. So, nope, it wasn't really pumpkin and it didn't taste like pumpkin.

Very tasty . . and we KNOW what our cows eat!!

@ Ceejay - (Giggle, snort!) You crack me up. Bet Pumpkin was really tasty, though!

Last night's dinner was gross. We had those organic hotdogs DH picked out. They were turkey and tasted and looked nasty. The beef ones are way better, if hot dogs are your thing. DH is from Denmark and they love hot dogs.

Tonight I want to make something tastier. Hmmm... ideas?

I'm thinking grilled chicken and roasted vegies in the oven.

Hugs,

Nicole

Thanks girls! I told my daughter that the "pumpkin" roast was very tasty . . but it didn't taste much like pumpkin . . :D

The last beef we butchered was named "Nachos" and the one before that was "Daylight". Yup, "Daylight" burgers and "Nachos" steaks . . or whatever!

Next in line is "Gunsmoke"!

Tonight we are having a pork roast in the oven with fresh rosemary, my grandmother's homemade Greek macaroni and cheese recipe, and vegetables. Thank Goodness we have eaten all the blondies! Won't be baking anything sweet for a bit...

Not sure on a side. There is a brussels sprout recipe I've been wanting to try, and baking/cooking is therapy to me

Jamie Oliver's white fish seasoned with rosemary, lemon zest and cracked pepper, wrapped in proscuitto then pan seared and finished in the oven, served with steamed asparargus and Russian Fingerling potatoes. All topped with a lemon-mayo sauce. Welcome Spring!!!

Ooo, Jonni, sounds like a cooking show!
Me? Just regular ol' chicken nachos tonight! First I'll cook up the chicken in the stock pot for soup (mmm!), then shred the chicken for dinner!

Lisa, you should try this if you like fish--it's one of the easiest, fastest and best ways I've eaten fish in some time. I'll send you the link if you'd like!
