Chicken Quesadillas-I make them with cooked chicken, sauteed with onions and bell peppers. Place that mixture with cheese inside of a flour tortilla. Fold it in half to make a half-moon and grill with butter until a little crispy. Serve with picante sauce. UMMMM

The Mister ordered Chinese take-out to make up for me taking care of him so much lately. Shrimp with cashew nuts for him, General Tso's chicken (yummy yummy) for me.

Tonight we're going to have halibut fillets, asparagus, and sweet potato. Need something a little healthier after all the junk I've been eating!

Roast in the crock pot with potatoes, carrots and celery ( and herbs too).

Made Candy's (Lazy J Bar C Farm Blogspot) pumpkin muffins with the "budget" baking mix recipe. YUM!

Thanks Alyce - that makes 2 of us! Leftover night to the rescue!
But I have no chocolate cake. Hmmmmm.... I do have some brownies and chocolate chip bar cookies (left from Sunday) if they make it to the end of the day!

DH is working tonight, so as part of his gift from me, I am making his favorite homemade lasagna. Think I will serve it with a green salad with homemade buttermilk dressing, and a crusty hot loaf of bread. Yum! Who's going out? Who's staying in and what are you eating tonight...anything special?

We don't go out for Valentine's Day, but we do have fun here! Breakfast was heart shaped waffles with strawberries and whipped cream, heart shaped bacon and hot chocolate with whipped cream and sprinkles. Lunch is heart shaped sammies and applesauce with red hots.

Dinner: heart shaped meat mini meatloaves, roasted red potates they are fingerlings whose meat is reddish), big salad, rolls and sparkling cider.

One good thing about music, when it hits you, you feel no pain.

Mister took me out for Italian and asked me for a chance to start over after I laid down the law the other night. (We'll see.)

I had bruschetta topped with shredded bbq pork (YUM) and he had oysters topped with breadcrumbs and a rich sauce. We both had flourless chocolate cake for dessert; that was arguably the best part!

Tonight, I'm thinking coconut shrimp.

Back by "request" the "What's for Dinner Thread"! :) ;) Thanks, Kristina!

Tonight at my house I felt like cooking up a storm. Dinner was homemade Chicken Cacciatore in the cast iron skillet, using the recipe from "The Bridges of Madison County" cookbook, by the prop caterers for the movie from the 90's. Such a cute cookbook with country drawings and great recipes. For dessert, DD and I baked homemade blondies after she got home from school. So fattening...but so yummy. Will have to walk a little extra this weekend. :) What's going on at your house?
