We're going out to dinner tonight, though I'm not sure where yet. It's my youngest daughter's choice.

@Margo, you are very welcome.
Tonight we are having a snow day. Schools are getting out early. I wanted to make homemade chili tonight, but was voted down. Since I did not make One Skillet Mac and Beef on Saturday (DH surprised me with yummy takeout from a restaurant that makes organic food), I am making that tonight. Methinks Sole Almondine with glazed carrots, penne pasta, and cheesecake for dessert...all served by candlelight while I wear my "little black dress."
...You know, I'm doing this to cheer up the Mister, but if I'm not careful I might have a Leap Day tradition on my hands.

Tonight I'm grilling chicken breast Mediterranean style with lemon and olives. Big green salad with garbanzos and mashed steamed cauliflower.

I haven't a clue! Since DH gets home before I do, he usually has dinner ready for me, but I never know before I get there. I usually leave his list of ideas, but he's free to come up with whatever. He's actually mastered making gravy!!

It's Friday. We all want pizza. Thinking I will throw together a couple of homemade ones with cheese, tomatoes, basil leaves, and olive oil. Yuummm! Will make them early so I can throw them in the oven as soon as dd is done with dance class. What's your Friday night look like? Nicole

Broccoli Beef in the crockpot at our house tonight. Just got a couple of wonderful ribeye steaks from our meat CSA (walnut4meat.com), and when they get slightly defrosted, you can slice them oh so thin, and they cook up oh so wonderful! Princess requested it, and it's a recipe she did for Chinese New Year on the blog if you want to look it up. We'll serve it over rice, just like last time.
Since today is Dr. Seuss' bday, maybe we can pretend the broccoli is truffula trees from The Lorax?!

Chicken and pasta with home made pesto. We grew a ton of basil last summer and made quite a bit of pesto. Froze it in ice cube trays and bagged it and popped it in the freezer. Very convenient. When we made it, we cut the oil in half so it's kind of thick, but when I heat it up I add some milk to make a sauce. It's amazing! |

@Emily, Oh that sounds sooo good. I had an amazing basil crop last year and did the same thing, freezing much of it. Unfortunately, we lost power for a week twice with the two storms we had this fall, and I lost everything in the freezer, so I lost all my yummy basil.
Tonight I'm making Homemade Beef stroganoff, out of a vintage Good Housekeeping Cookbook from the 1940's, except that my version is made with organic ingredients like organic fresh mushrooms from Trader's and organic sour cream. I think I will put mine over mashed potatoes instead of pasta.

Nicole, that is so sad! All the hard work and money just to be wasted. I hope you have a good crop this summer to make up for the stuff that was lost.
Beef stroganoff sounds wonderful too! I haven't made that in quite awhile.....thanks for the idea! |

We are having...chocolate cake! *laughs* I sound insane.
I am mentoring a local college student, and promised her a treat so she'd have something to look forward to after her calculus midterm. She said, "I want chocolate cake for dinner, and I want to watch the Lord of the Rings trilogy." Um...okay!
Ric laughed about it and asked if we wanted a girls' night in, but we both said we want him there! (She gets really hyper, and I may need backup!)
I think I'll make some pasta with steamed vegetables before she arrives so we aren't eating *total* junk!

Oh Alyce, that sounds like fun!
We are having Crockpot Lasagna Soup (I know it probably doesn't sound too good but it really is and no processed stuff in it :)) I also made some bread and we will have a salad.

Shirley Jean, Kristina, those both sound amazing!
We didn't get around to the cake OR the movies because she had to help break up a problem with her best friend's roommate--so we are rescheduling. She did get to hang out and relax with us for a while though (I think Ric wants to adopt her!).
I think tonight will be breaded sole with bowtie pasta and veggie-tomato sauce.

I realized I forgot to change the heading this morning. OOps...hope everyone had a good Sunday. I did not make my stroganoff this Saturday because it got too late, so we had an easy meal. Instead I made it tonight with all organic ingredients: sour cream, fresh mushrooms, grass fed beef...over mashed potatoes with a side of green beans and tomatoes tossed in a basil butter. Delish!
