Angela, that is so cool....I discovered making all sorts of jellies last year...and just keep finding new ideas to try!! Thanks for these great ideas!!! |

For violet jelly, are plain old woodland violets okay, or does it need to be scented violets?

I only have the plain old wood violets. When you get a whole bowlful of them they have a nice smell!

Both are the same. The purple ones have a better color, but mine are always mixed. I wind up with a paler, but just as tasty jelly as everyone else.
Sometimes if the bloom is plentiful enough, I use 3 cups of flowers to 2 cups of water. The stronger flavors are really nice on rye bread which I just love!

Just made 2 batches of violet jelly. First batch is runny. So I will redo that w/more pectin. Second batch looks better since I went ahead and added the second pouch of pectin. Made 24 4oz. jars. Just wish it would jell the first time. It's more or a pretty pink than violet. Very light taste. I would make it again. Dandelion is next.

ALL of these jellies sound absolutely WONDERFUL...... just really exciting and so many awesomely sweet and delicious ideas here to enjoy!

What kind of jellies am I making? I'm afraid I am a little more traditional....always, always, make blackberry (the grandkids refuse to eat any other!). I make plum if I beat the birds to the plums. Sometimes cherry and blueberry. If I don't have enough blueberries, I mix them with blackberries for a nice mix. Also make triple berry (with raspberries added in). And I make peach.
I sure want to try dandelion and lemon though!

well, i want to try this lemon jelly since i was gifted bags and bags of lemons last week. I also want to make rose jelly.....ANGELA.... do you make rose jelly the same as the violet recipe, just substitute roses for violets????

QUESTION ... again..lol... You all are making dandelion jelly... from the weeds, dandalions?.... those little weeds that have white puffy flower puffs that the kids pick and blow into the wind??? Where in the world do you buy these? Or do you pick the weeds?????????

You can buy them at the health food store but they are very expensive. It's cheaper to just pick your own! Free, and they are every where!

With dandilion the most important part is to not have any green parts in your water when steepin.
Rose jelly is made with the same recipe as violet, just substitute rose petals for violet heads.
My neighbors think I'm crazy for sure. I pick all the weeds in my yard! LOL! Violets, dandilions, clover, whatever I can find. I make teas and home remedies as well, so nothin is safe around me!
I also take all that 'useless' fruit that they hate mowin over in their yards. Like crabapples, those tiny little wild plums, the perrsimmons that just squish everywhere, and those horrible mulberries that the birds paint their cars purple with!
I love all those problem fruits cause they mean free food for my family!

You know one day this lady insisted on coming home with us after church. She was kind of annoying cause she would insist on coming to our house uninvited, even when we would say not today cause we were busy. Well, on particular time she did this, she had gotten in our car and wouldn't get out. My parents told her it was their anniversary and they had planned on dropping me and my grandmother off at home (I was a teen, and grandmother could no longer live independently) and then spending a peaceful afternoon together alone. Any way the lady didn't care and wouldn't get out of our car. So we had to take to her to our home, cause she wouldn't get out at her house either, even though my parents kept saying hey it's our anniversary. Any way.......you know what made her decide to go home. Mom said she would make spaghetti and a green salad. So sent me out in the garden to pick the herbs for the spaghetti and the rose petals to perty up the salad. When I came back with a basket of leaves, and rose petals and started adding them to the food, she said, we're eating leaves and flowers for lunch? And we said yes........she decided it was time to go home! hahaha We decided, wow a new trick nothing else had worked up to that point! lol haha

ok.. well the dandalion jelly is out for me as I live in sububia where it will be really difficult or really expensive to get some. SOOOO I am going to go visit my aunt for a weekend soon and make rose jelly since she has LOTS of blooming rose bushes with tons of petals!!! Thanks Angela!!

Dandelions are steeping. Tomorrow I will pick another batch of violets. Already gave away 2 jars of the violet jelly.

I have no soil here... where i live the only plants are in pots or containers with bought soil. I am going to keep my eye out for them around here or near my cousins area too.

Just finished with 12 4oz jars dandelion jelly. I think it tastes even better than the violet jelly. mmmmmm..honey flavor. I will definitely make another batch.

My great grandma used to make this lemon stuff. I was younger but it was delicious. I don't think it was a marmalade because I remember I hated the texture of them as a kid. It was more like a jam, but it was creamy. She canned it so it didn't have to be refrigerated. Any idea what it was? Was it just a lemon jam or is it possible to have a creamy type lemon curd that can be preserved? I wish I could ask her for the recipe but I will have to find something similar! Thanks in advance!

I didn't read all the posts, but I am looking forward to making strawberry jam with Grandma when we get back to PA.....I love jam days with her...they are the best:) It is always more fun to can and make jam with someone who has done it there entire life like her....she is so full of useful tidbits and stories:) Erica |
