Mines not settin up, but I don't think I got it to the jellin point properly.

My recipe called for:
1 1/2 lb lemons
3 1/2 lb sugar
6 cups water

Thinly slice lemons peel and all, cover with water and let sit 24 hours. Boil water and lemons for 1-1 1/2 hours till softened. Add sugar and boil to jelling point, approximately 30 minutes. Hot water bath for 10 minutes.


I'm gonna re-boil mine and see if I can get it to jell better. I left the skins in mine so it's more jam-like. My grandma said the skins will make the taste stronger with time and keep it from losin it's flavor in storage.

Sounds awesome, I think I will make preserves. I love cantaloupe, I have this vision of it tasting some what like peach preserved. And it just looks beautiful in color in my minds eye! lol

I'm new to Texas, and I'm hoping to find a big enough stand of agarita bushes to make agarita jelly.
Wish I still lived where the violets grow!

agarita? Never heard of it! Sounds like Margarita! LOL. Dandelion and violet are done so far-they were good sellers at the farmers' market last year. Mint jelly was on my "to do" but with a trip home this year not sure I'll accomplish it.

Plum butter is made just like peach butter! My grandma used to make some that was really nice, she spiced it just like spiced peach butter. She used the spiced peach butter recipe in the ball blue book and just substituted plums for peaches!

Made a batch of dandelion jelly yesterday, and I am hoping to make another batch tomorrow. I've been talking to my friends and telling them not to be alarmed if they catch me in their yard picking dandelions!
I will be making a batch of red onion jelly-- so yummy on a roast beef sandwich! And 1 more month to go before those beautiful strawberries are ready!
Not many things are as pretty as a shelf full of preserves!

I'm back!
Prune butter, or, in German, Pflaumenmus, is Soooo yummy! It is acutally made with prunes, not plums.
I'm going to have to do some research on it!

I googled prune butter and found a ton of different recipes. I'm not sure which one would even be close to what you're lookin for.

I thought you had asked about plum butter. Sorry. I guess I was just fallin into my childhood memories agian. Cannin always takes me back to sittin at the table and doin prep work on the fruits or veges and starin at the sunlight gleamin off those rows of jars!

I think I'm gonna have to make some plum butter!

If you find a good prune butter recipe I'd love to try it. My youngest loves eatin prunes with her grammy, maybe they would like some prune butter and toast!

Keleen, I use the sure-jel in the pink box. I think the recipes are called less sugar. It uses a lot less sugar and more fruit and it's not over powering on sweetness. It's the only way I make my jams. It's half the carbs and the regular sure-jel way.

I just had a piece of cornbread with butter and some lemon jam. It's amazing!!!

I reboiled it and got the gellin point right. It sat up nicely this time. The color is a little darker than I thought it would be, but it's a nice golden color. The peels in it are candied up very sweetly. It's good!

Yummmm, Angela, that sounds amazing!
I haven't looked at the recipe for the lemon jelly, is it anything like lemon curd? Obviously it's not creamy, but flavor-wise, does is resemble the curd?
And I love that you used the peels.. no waste!

Teresa... I haven't had lemon curd, so I'm not sure. I posted the lemon recipe I used on the first page here.

It's a recipe from the UK, so it's in pounds instead of cups. I use a lot of foreign recipes and I prefer to look for the original instead of the americanized versions, so I have a small food scale in my kitchen.

You can google for the 'cups in a pound of' whatever and convert it over. I used to do that alot, before Hubby started gettin interested in bakin and cookin. He insisted on a scale, so we have one now.

I find the scale works better then cups in the end, cause sometimes the cups are not exactly right, the scale always is.

Thanks ladies, I will look into getting a kitchen scale-- there have been quite a few times in my baking life that I've wished for a scale, especially when baking bread!

I've never regretted purchasing mine. I've been using a scale in my kitchen instead of measuring spoons/cups for about 10 years now and really prefer it.

I found this on the internet...and all the reviews were great! I think I will try ASAP....

Easy Lemon-Blueberry Jam


4 cups fresh blueberries
2 cups sugar
1 (3 ounce) package lemon flavored gelatin

1.In a large saucepan, slightly crush 2 cups of blueberries. Add remaining berries and sugar, mix well. Bring to a boil, stirring constantly. Remove from the heat; stir in gelatin until dissolved. Pour hot jam into jars or containers. Cover and cool. Refrigerate.

I'm jealous of all you ladies making jams and jellies. Our daffodills are in full bloom right now, that's are far behind the rest of you we are, lol! I have never made violet jam or jelly, can someone tell me how? Thanks for the cantaloupe and the lemon recipes. My Mom has a lemon tree with 12 lemons on it, so she will love this recipe!

Debbie!! I was just thinkin that I have too much juice in the pantry and needed to get it used up. I use juice instead of water and mix it with jello, add 1 tablespoon of lemon juice per cup of juice, and can it for 10 minutes.

You mix and match flavors and throw in a little mashed and heated fruit, which can be sugared and boiled if it's tart, and you get really interesting jellies and jams. We've even reconstituted dried mango to add to pineapple jello in orange juice and had a fabulous tropical jam that got all gobbled up in less than a week!

We must be connectin on the same wavelength here! LOL!
