Hello,
my name is Casey. I thought it would be fun to hear about all the favorite farmgirl meals out there.
Mine is Oat bran muffins, deviled eggs and fruit. It is often a Friday night ritual meal for me and a source of "comfort food". The Bran muffins are completely gluten free and taste really good. I tend to over do the Almond flavoring in them.

How about you ladies? what kinds of meals do you love to eat?

Mine is cheese enchiladas and spanish rice. but only my spanish rice, I always hate everyone else's. I take and saute in butter; the rice (a little more then 1 cup) until it's opaque and then add the seasonings that I want, usually chili seasoning and some hot dried peppers, onion and garlic. Then I add 2 cans of diced tomatotes with the juice and of course 2 cans of water and bring to a boil and once its boing reduce heat to a simmer, cook for about 30 to 40 minutes. stir once in awhile. the enchiladas are always made with green sauce for cheese and chicken only use the red for beef.

I am a farmgirl of Italian descent. My Dad's homemade spaghetti sauce can cure me of a headache. It is the perfect comfort food for me!

This is a great topic, Casey! I have to say, I am addicted to the smells of certain foods, more than the taste. I think it is because the sense of smell brings back so many memories of my great aunt's (huge farm) kitchen.

We have so many favorites, I'll have to come back and post later.

Why don't you post your recipe for the muffins?

My mother was a great cook -- nothing fancy but good food and I miss her cooking. Roasted chicken, pork chops and sauerkraut, stuffed cabbage rolls and stuffed peppers with mash potatoes.

Mine are seasonal. When it's cold, my favorite is tomato soup (with onion powder, chives, and parmesan cheese) and grilled cheese - preferrably cheddar on wheat - cooked in the skillet. In the summer, I enjoy cottage cheese and tomatoes, saltines optional. It's my opinion that simple is better - and like Ann, if I don't have to prepare it, it tastes even better!

My mom makes the best lasagne going. Everything is made by hand - sauce, noodles, meatballs, big crusy bread and a cool green salad. A nice class of red wine and I could sit there for the afternoon!

Actually, mom's creamed, sliced, hard boiled, eggs on mashed potatoes. Friday night comfort food. So yummy you could just run around bare foot in it!

When I first answered I was thinking about my making of a favorite meal, but all you gals talking about moms cooking-- my mother and I are both from Germany. My most favorite meal that she makes is roulanden.
sirlon roast thinly sliced, spread with mustard, a quarter of pickle, a sausage roll of lean ground beef and a half a slice of bacon. This is then rolled up tied with string and browned on top of the stove, (in a heavy dutch oven) once browned a small of amount of liquid is added, water or wine. The meat continues to cook (simmer) in the liquid until done, usually about 45 minutes. The rolls are removed and this makes the most faboulus gravy and meat dish ever. Always served with mashed potatoes, garden green beans and salad. This is my birthday dinner every year.

It depends on the time of year. If it's cold, I love new england clam chowder. Spring, Spaghettini puttanesca, Summer.. a little dish I made up with feta cheese and shrimp I call Shrimp ala Greeque. And all year around Fresh bread.

I think my two favorite meals would have to be Potato Soup, with a bit of cheese and bacon bits in it. And a good Cheeseburger with chips or fries.

Gosh. It's really difficult to choose. I'm going to have to say that (of late) my favorite dinner meal is this fish recipe from Jamie Oliver. White fish, seasoned simply with chopped rosemary, lemon zest and black pepper. It's wrapped then in proscuitto, pan seared and oven finished, served with a side of asparagus with a light lemon mayonaise sauce. It's fabulous. And I could eat it every day, I think!

For summer, it would have to be penne with homemade pesto from the basil in the garden, with pan seared chicken breast in white wine and olive oil with shaved parmesan on top.

For regular old comfort food, I love homemade corn beef hash, which, I really only have in the Spring time because I brine my own briskett for corn beef and it's a whopper--so there's a little corned beef in everything! But it's best in hash with potatoes, onions, some peppers, caraway seeds, a little cayenne and some coarse grain mustard to finish.

I consider myself a fairly good cook, so I rarely make the same things over and over, but a good old stand by that we do have each week is spaghetti and meatballs or meat sauce, with garlic bread. Perfect for a Monday night after work when you're trying to get back into the swing of things.

My favorite "go to" breakfast is toad in the hold (egg in toast) on the griddle. It's always been a favorite!

~Maply-Curry Pork Roast
~Oven Roasted Root Vegetables
~Spinach
~Homemade Biscuits with homemade Apple Butter

~Homemade Chicken Pot Pie
~Tossed Salad
~Chocolate Cake

and of course I am with Joanna on this one:

My favorites are biscuits and gravy with eggs for breakfast. Salad with EVERYTHING you can imagine...lol, is a great lunch. Smacking on a freshly baked loaf of bread and spinach dip, the fried chicken, fried okra and green tomatoes. Sounds healthy right? I'll have to bake a fresh blueberry pie, so I can say I ate fruit. Good thing I don't eat my favorites often or all in one day!

The tears I shed then, watered the flowers I harvest now.

Favorite meats, chicken fried steak, smoked chicken and char-burgers on the grill.

Favorite sides....during the spring and summer, baked beans, fresh salad and potato salad....corn on the cob, okra, and anything else out of the garden.

Husband's favorite meal....meatloaf, fresh crowder peas, fried okra, baked potato, sliced tomatoes, cukes, and onions....with a big cast iron skillet full of cornbread.

My husband & I make our own pierogis...an enormous batch & then freeze them for many meals for the next few months. So my favorite meal is our homemade pierogis...especially because hubby usually cooks them & it is the one meal I don't make on the day we eat it! We make potato, spinach, meat, cabbage, and mushroom. Cooked in some olive oil & loads of garlic with steamed broccoli on the side. Delicious! And it is lots of work on the day we make them & freeze them, it takes several hours, but it is fun to do together & it is many easy meals all ready to go for days that we are short on time!

I love food and I don't know if I can pick favorites! Some of our favorite meals are beef stroganoff with egg noodles, boeuf bourguignon, smoked brisket with bbq beans, meatloaf & mashed potatoes, and grilled chicken. For breakfasts, I'd have to say either biscuits & gravy or good ol' buttermilk waffles with maple syrup.

Our favorites are saurkraut & pork, w/mashed potatoes and chopped onions, roast beef with potatoes, carrots & beans roasted with the meat, bbq chicken, potato salad, ..... really anything goes..but these are meals everyone loves. :)

Would you be willing to share a Pierogi recipe? I just discovered them and my husband (being Polish) grew up with them. I would love to make some Potato Pierogis for him. I would sure appreciate a recipe :)

I have two favorite meals, the first being roast chicken with mashed potatoes and gravy, and the second being homemade soup with bread smothered in butter. I also love just about anything my mom makes, and my Nonna has always made amazing focaccia and fry bread.

I'm at work at the moment so will try to get our pierogi recipe posted tomorrow when I'm at home. They take time, but you will love them because there are so many different options for fillings. We keep coming up with new ones all the time! Plus my husband is a meat-eater, but I'm a vegetarian, so we both make the fillings we like & yet still get to eat the same meal & everyone is happy!

Favorite "go-to" meal--Fish chowder--super easy meal, healthy, inexpensive, quick. My husband loves fishing, so we usually have fish on hand or in the freezer, good way to stretch the meat, can be used with different kinds of fish, and whatever veggies are on hand. Good with crackers, french bread, whatever!
