Does anyone have a good moist coconut cake recipe? My 50th birthday is coming up and that is what I want for my birthday cake!! My Grandmother used to make the best coconut cake. I wish I had her recipe.

There is a recipe in the new Farmchicks In The Kitchen Cookbook, but I haven't tried it yet. You can also go to www.allrecipes.com and search for coconut cake. There should be lots of recipes there. I always read the reviews to see which one to try first.

I will do the best I can to find the recipe my sister gave me a few years ago...It was the very best cake I have ever had!! I will look asap!!

Dorinda, first, Happy Birthday for the big 5-0!! Second, I guess we are of like mind because I have been searching for a recipe too. Coconuts were on sale for 99 cents here and I thought for that cheap I HAD to buy some for a cake and a pie. This is the recipe that I am going to use for the cake but I think I will be ommitting the raisins and cherries: 1 cup butter or margarine 2 c sugar 4 eggs 3 cups sifted all purpose flour (reserve 1 cup to mix with fruit and nuts) 1 tsp salt 3 tsps baking powder 1 cup milk 1/2 tsp vanilla extract 1/4 tsp almond extract 1 cup chopped pecans 1 cup chopped walnuts 1 cup golden raisins 1 cup grated coconut (see filling instructions) 1/2 cup cherries (optional)
Filling: 4 coconuts, grated (use 1 cup in batter) 4 cups sugar 3 tablespoons cornstarch Milk from all 4 coconuts
CAKE: Cream butter and sugar until very fluffy. Add eggs, one at a time, beating well after each. Sift 2 cups flour with salt and baking powder three times. Add flour and milk alternately to egg mixture. Add extracts. Mix pecans, walnuts, raisins, coconut and cherries (if you choose to use cherries) with the reserved cup of sifted flour and stir into batter. Pour into 3 (9-inch) cake pans that have been greased and floured. Bake at 325 degrees until knife comes out clean, about 30 minutes. Cool in pans about 10 minutes and then cool on racks.
FILLING: Mix all ingredients together and cook until thick on low heat. Stir frequently. Place filling on top and sides of each cake layer. Frost sides with 7-minute frosting if desired.
7 Minute Frosting: 2 egg whites 1 1/2 cups granulated sugar 1 1/2 teaspoons white corn syrup 5 tablespoons water 1/8 tsp salt 1 1/2 tsp vanilla extract 3 marshmallows Place all ingredients except marshmallows and vanilla into the top of a double boiler over hot or boiling water and beat with a rotary beater for 7 minutes or until mixture holds a peak. Remove from heat. Add extract and 3 cut-up marshmallows. Continue to beat until well blended and apply to cake.
Now, I just have to clean my coconuts!!

Thanks Marybeth, I will keep this one in mind. I was so hoping that maybe one of you ladies had an old family recipe that you would like to share that might be like the one my grandmother use to make. I will look on the enternet also.
