I would love to make some dandelion jelly since they are all over right now. I know Aunt Jenny makes it and was wondering if she would be sharing the recipe. I don't know if it can be make like the violet jelly or not.
I am going to get more pectin while I am out today so I can get started.

Aunt Jenny, I used your Violet Jelly recipe last night...can't wait to give them out as Mother's Day gifts (from Violet, of course :)) Thanks for posting that last year!!!

Oh man, what perfect timing! I made mine last weekend, and it didn't set up quite firm enough, so I'll have to reprocess it. I'm learning how to use clear-jel. in my dandelion jelly, I used:
2 cups petals 2 cups boiling water let it sit overnight
strain into stainless steel pan, and add: 4 1/2 cups sugar 1/4 cup lemon juice, zest of one lemon pectin, clear jel, etc. (I used 3 TBSP of clear jel, but, I think I'm going to sprinkle in a few TBSP of either pectin or more clear-jel. and re-process everything) Food coloring, optional

I ordered dandelion jelly from Aunt Jenny and boy is it delicious! The rosemary is tasty, too....you farmgals should try that one out for different! My guests have loved it on homemade crackers!

I asked this with the violet jelly thread - do you mean the flower heads or pull the petals off and use the petals? My daughter made it one year and she had to reprocess hers, too.

Pam, yes you remove the petals for dandelion (use scissors to snip the green part off), and no you don't for violet.

Here it is..sorry I didn't go online last night!
Dandelion Jelly 2 heaping cups dandelion petals (it takes about 4 cups whole flower heads)I cut only the yellow part off with scissors 2 c. boiling water 1/4 cup well strained fresh lemon juice 4 cups sugar 3 oz liquid Certo pectin (no substitutions) a couple drops yellow food coloring if desired Poor boiling water over petals in a quart jar, cover and let sit for at least an hour..but no more than 24 hours (refridgerate it if you are going longer than an hour(after straining this will be your infusion) Sterilize jars (I use 4 oz or 1/2 pint jars) and keep hot until ready to fill, get lids in hot water and rings ready too. To make jelly: stir lemon juice and sugar into infusion in a 3 quart pan. Bring to a full rolling boil that cannot be stirred down. Add liquid certo and continue to boil for two minutes (exactly).This is when to add food coloring if you use it. Skim any foam from top with metal spoon.Ladle quickly into hot jars to 1/8" from top. Clean each rim with hot wet clean cloth and put on lid as each is filled. Water bath can for 10 min. makes 4 or 5 1/2 pint jars...or 8 or 9 of the 4 oz jars. Have fun girls! I am finally noticing just a few dandelions popping up in my yard (when the snow melts off and on!) so I know it won't be long until my next batch either. OH!! If you can't gather enough for a whole batch at once you can freeze the cut petals in a baggie until you have a full 2 cups of petals..adding new ones each day.

I made the jelly tonight. It's so pretty and it jelled! I can't wait to taste it now. Thanks so much for the recipe. My yard is full of dandelions right now. I want to pick more and make more jelly later.

I had picked over 4 cups of flowers last week and went ahead and poured the boiling water over them. I strained them after a few hours and put the juice in the fridge. It was almost 3 days later when I got to make the jelly. It has a stronger flavor than the ones I made first. I like the actual flowers taste. Kind of like the dandelion tea when I drink it. And it's just beautiful in theose little jars.
I went out this morning to pick the last of the violets. Just barely got a little over 2 cups of them. But the dandelions are still all over the place. I guess I'll be making more next week. I hope I can sell some at the farmer's market.

Well, I picked and infused dandelions and violets today-I'll be making more jam tomorrow-I bought some 1/2 pint jelly jars at Ace Hardware, as the pint jars are a little big for my taste. Can't wait! I want to find some cute labels to put on the canning jars....any tips?

Woot! My violet jelly turned out perfect, and my dandelion jelly is setting up WONDERFUL. IT turned out more orange than the first batch, but, that's fine with me! The first batch hardly set up at all.

Personally I don't like the taste of re-cooked jelly. I would call it dandelion syrup and make a new batch. Sorry to tell you that. But..it may work..someone else may have better experience with re-processing that I have had. Don't give up debra!!

Jenny when you pick the dandelions do you need to use them that same day or can they sit a few days? Just curious as I could pick some and cut off petals and then wait until weekend to make the jam. Thanks Rae

I can hardly ever use them right that moment...but I do take the time to cut the petals off and freeze them in a zip bag until needed..works great and I notice no difference in taste at all.
