Farm Kitchen: beet greens?  |

i know my grandpa loved them, but i don't know how to fix beet greens now that i have a ton from my garden... anyone have any great recipes?

After you put the butter on, add a little touch of sea salt and balsamic vinegar. I could eat some right now :o)

thanks gals! can't wait to try them with our next batch of beets! (i was too lazy this batch and just gave them to the chickens... but there are many more beets to come!)

I love them. I first had them when I lived in Maine when i was in my 20s. They are very much like spinach. We made them like spinach and put salt and vinegar...YUMMY!!!
we have moved to our farm...and love it |

You can eat the small tender ones in a regular salad too

Try wilted salad - This works best with young beet greens. Tear the greens into small pieces, put in bowl. Cut up a half pound of bacon into small pieces, and fry until crisp. Add some chopped green onions, stir until slightly soft. Add a couple of tablespoons of sugar to the bacon (do not drain) and 1/4 cup vinegar. Stir - then pour over beet greens. Serve immediately. Not very healthy, except for the greens, but a great treat! |

They make the best smoothies!!!!!!!! I blender them with some frozen fruit and a little water and my daughter puts a little stevia.... you can use a little honey or agave. It is very healthy and full of iron. It may sound weird but it is yummy. I cook them with garlic and add lemon after they are done. Lemon, vitamin C, helps the body absorb the iron in the body.

Hello again, gals! I was wondering if anyone had any more recipes to share for beet greens? Does anyone know if you can freeze them like spinach? And substitute the greens in spinach recipes, like spinach enchiladas? I really hate to give most of them to the chickens this year, so I'm trying to give myself a plan before harvest time. Actually, Faith, your smoothie sounds very good! What type of fruit do you like to use with them?

Glad I saw this! I've been putting the beet greens in my compost pile. Seems like such a shame now. Do you only cook up the greens on the young beets or can you use the greens from the mature beets as well? I pulled up my mature beets yesterday,some of the greens were in good shape, some were enjoyed by the garden bugs. I wonder if the greens get bitter as they get bigger? |

My grandpa likes the greens from the young beets, but I ate the greens from the mature plants last year and I thought they were just as delicious! This year I'll have to taste test between the young and mature greens, since I'll have both to try.

I got a recipe from a friend last summer, can't remember what it is called. Make a bun dough, and when shaping the buns make them very small. Wrap each bun with a beet leaf. Put in a pan and let rise. Next pour about 2 cups of sweet cream over all, and bake. I tried it, and plan on trying it again this summer. My friend said she cuts all the tops off her beets part way through the summer, to kind of give them a fresh start. I've never heard of that. She then can freeze those leaves and use them later when she has more time. |
