Hotties,here is our new focus for August both here and in our Henhouse:
For the month of August we are going to focus on recipes for hot weather. Please post your favorite recipe to fix on these blazing hot days we have in the month of August in Texas. It can be a salad recipe, a fruit recipe, a pie recipe, a icebox cake recipe or anything you like to fix to cool things down!

This recipe is from the Lady and Son's Savannah Country Cookbook by Paula Dean.
Black Bean Salsa : serves 12
2 - 15 oz. cans black beans rinsed and drained 1- 17 oz. package frozen whole- kernal corn, thawed 2 large tomatoes, seeded and chopped 1 Large avocado, peeled and chopped (optional) 1 small onion, chopped 1/8 to 1/4 c. chopped fresh cilantro 3 to 4 TBLS lime juice 1 TBLS red wine vinegar salt and pepper to taste
Mix all ingredients throughly in a large bowl. Cover and chill overnight. Taste and add salt, pepper, or more lime juice as necessary. Serve with tortilla chips as an appetizer, or with grilled chicken breast as a meal.

1 bunch fresh mint, chopped 1/4 c. lemon juice 1/4 cup simple syrup (put the recipe below) 1/2 tsp amaretto 1/2 tsp poppy seeds 2 c. watermelon balls 2 c. cantaloupe balls
In a blender, combine mint, lemon juice, simple syrup, and amaretto--blend until smooth. In a large bowl, combine the poppy seeds, watermelon and the cantaloupe. Add the vinaigrette and toss. Chill for 30 minutes and serve. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Simple Syrup:
1/2 cup water 1 cup sugar In a saucepan, combine water and sugar over medium heat. Bring to a boil, then reduce heat and simmer for 5 minutes, until the sugar has dissolved. Take pan off heat and cool the syrup. I have found that you can store the left over syrup in the fridge for up to 3 months, as long as you keep it airtight! ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
This recipe s sooooo yummy, especially if you like melon. If it's just adults, I double the amaretto in the vinaigrette, and then drizzle some over the top in the serving dish.

Cold Corn Salad
2 cans corn, drained 2 green onions, chopped 1 large bell pepper, chopped 1/2 cup celery, chopped Black pepper to taste 2 tomatoes, chopped Enough Mayonnaise to hold the salad together
Combine corn, green onions, bell pepper,celery. Mix in enough mayonnaise to hold it all together. Chill, and just before serving, add the chopped tomatoes.
Serves 4 to 6 people

Here is an old classic recipe my husband and I enjoy in the Summer...
Frozen Pea Salad
1 20oz package frozen peas, thawed but not cooked 1 1/2 cups green onion, including green part 1 1/2 cups waterchestnuts or celery, chopped 1 lb bacon, cut in 1/2 inch. pieces & fried very crisp (you can use a little less) 1 cup broken cashews 1 cup sour cream Pepper to taste
Early in the day or night before serving, mix the thawed peas with onion & waterchestnuts or celery. Cover and refrigerate. Fry bacon anytime during the day and set aside. Just before serving, add bacon, cashews, pepper and sour cream. Toss well.

Hotties, with the aproaching storm Edouard heading my way, I may lose power for a while. I don't see any big problem unless it strengthens quite a bit before landfall, but our power usually goes out in bad storms,so I'm sure it will this time too.

Good Morning Hotties! Well, we went through Storm Edouard just fine. We had some rain and slight winds, nothing more. So that was good. Yesterday we were visited by a salesman selling security systems for the home. My husband and I signed up, and the equipment was installed (right away...hummm). Today, after a little Internet research, I'm thinking this might be a scam so I'm waiting for the Better Business Bureau to open so I can find out more about these guys. We have a three day period where contracts can be cancelled so I need to know today on that. It makes me mad when I get "snookered" by someone, and I could hardly sleep last night for worry we had been taken. Anyway, I'll let ya'll know if these guys are no good, because I think they are going all over Texas selling these plans.

Hi Caron, I'm glad you made it through the storm ok. We were hoping for some much needed rain here in the hill country, but all we received was a little bit of drizzle. Hope things work out on the security system thing. :O/

Well, after checking the company out through several sources, it looks like the company is o.k. My hubby wants to stay with them for a while and if problems arise, we'll reconsider. We're also going to keep a close watch on the billing cycles to make sure we are being charged correctly.

Hey ladies, my past 2 weeks have been busy. Cleaning and decluttering. Still trying to hunt down a job- nothing so far but something is coming, I can tell. Playing a lot with Charlie. It's been so dang hot, trying to come up with indoor games. Enjoyed the nice long rain we had this morning. Boy...we sure needed it!! Have a good week.

Oh how I wish I could de-clutter! In my household, I am the one who wants it neat. My thought is if I don't use it, I don't need it. But hubby is the ultimate packrat! He keeps everything, and wants to keep it out where he can see it. This has at times resulted in much "heated fellowship". Right now there are boxes stacked in the living room that he will "go through,I promise" one day soon (meaning: sometime in his lifetime).

ok farmgirls- I FOUND THE PATTERN! Who here in the TX chapter quilts? There are 12 blocks so we really need 12 participants to do the friendship quilt. When you finish it the whole quilt will be 40 x 47. Step up and tell me if you wanna??

I wish I had the time to de-clutter too. We are in need of a good de-cluterring (is that a word?) around here. Brooke, I'm with you on the magazine thing, I have a bad habit of keeping every magazine I get...I have them organized in those nice little magazine holders, but I'm running out of room for the organizers. :O(

Brooke, Thanks for asking where I work, I work and volunteer for Roy Maas' Youth Alternatives, Inc. a non-profit organization that helps families and children in crisis. Our Boerne campus is on 42 beautiful acres. If you have time to check it out, I wrote my bio in the henhouse just a few days ago. I explain a little bit of what we do and what I do. The kids love to get visitors and show people around their place.

AngiKay, I would love to learn to quilt. Would the pattern be a good beginner's piece? I am pretty good a teaching myself new things with books. In fact I have a couple quilting books and a friend who quilts that could help me if I have questions. If you think a beginner could do these blocks then I would like to participate.
