Haven't looked at Sue's site yet but when I make my Earl grey Tea I use any apple jelly recipe, only I take about 4 cups of the juice and bring it to a boil. I then steep a box of Earl Grey tea bags in the juice. Remove the tea bags and then make jelly as you would. I like it on shortbread cookies for tea. Enjoy! Simply, Julia

LEMONS LEMONS LEMONS
I've got lemon trees and I've been picking every week. If I'm not making lemon curd or preserved lemons for gifts it's lemon pies, lemon bread and bars, lemon sorbet. I've got bags of frozen zest and frozen juice too. Around February/March the tangerines come in at then my kitchen is piled high with tangerines. |

I love lemon curd and make it every year as Christmas gifts, brings back sweet memories of the fresh lemons my Dad brought me from his tree in Calif. Lucky you Susie Q, a nickname my Dad gave me!

If SuzyQ dosn't have a recipe, I do...yummy stuff! My favorite thing to do with lemon curd is dip granny smith apple slices in it. My kids LOVE this! Especially the 25 year old.

DUH!! I have made lemon curd for years and never thought to CAN IT... Sometimes I amaze myself at how dumb I can be. So help me ..how long do you put it in the water bath or is another dreaded pressure cooker item? HELP!!?? |

I too have a special recipe for lemon curd if anyone wants it, and I've tried many, all of which I can in a hot water bath for 30 min. with good results from all.

Lemon curd is a english sauce that is thick and creamy and can be used on toast, muffings, filling for cakes and the list goes on......would you like the recipe? It's wonderful!

English Lemon Curd 1 c. sugar 3 Tbsp. grated lemon peel 2/3 c. lemon juice 3 lg. eggs,well beaten 1/2 c. cold, unsalted butter, cut in small pieces In top of a double boiler, combine sugar, peel, juice and eggs. Place over simmering water. Cook, stirring well for about 20 min. or till thick and smooth. Add butter pieces, a few at a time, during the last 5 min. of cooking. Pour into refridgerator or freezing containers, or process in hot water bath for 30 min. Makes 2 1/2 cups.
Katie-Ell, I've doubled the recipe before with no problems. This also makes a wonderful filling for tarts. With all this talk about lemon curd lately, I think I will make a batch and get a jump start on the holiday gift baskets. Enjoy!

Thanks for the Lemon Curd recipe -- looks great. Just purchased some beautiful lemons today, intending to make my famous lemon squares . . . may have to make curd instead. But I'll have to purchase a double boiler -- been married 24 years and never owned one, although I remember making Seven-Minute frosting with my Mom years ago using her battered old double boiler. . . . I see the curd can be frozen? Have you done that? How is it after thawing -- not watery? I don't can (although I CAN can); this year I'm using my freezer more. So I'd love to add Lemon Curd to my freezer (mini-)hoard, which right now includes corn off-cob and strawberry-rhubarb freezer jam. Thanks so much, Sue! |

The kitchen itself isn't so bad, its the fridge with the huge bag of blackberries I froze and now am going to make into jam for Christmas gifts. And a blackberry skillet cake. Then I have cranberries to make into sauce that have been frozen since late last fall. Its bad when you get a whole year behind!

That lemon curd recipe is identical to mine Sue!! It is a good one! Katie-ell...I had bad luck with freezing lemon curd..maybe someone else has had better luck.

Mmmmmm. Thanks for the recipe. I love lemon curd on my scones. I've been told it's easy to make, but I'd never know to can it. I'll be trying this one :) Sharon
