Trace, you are too much! Love your sense of humor. I'd leave my car door unlocked if you lived near my Walmart! Gonna try those Mock Crabcakes this weekend...I bet they'd be great as little miniature appetizers, too. Hmmm, I also stuff mushrooms with my "real" crabcake recipe, so I bet these mock 'cakes would be good that way, too!

I swear I can smell them cooking now. The photos were awesome.

Hey Jo, Virgina is what, a 12 hour drive from NY, lol. I just might, if the zucchini situation gets desperate, Lol Will keep in touch about it and will be needing a description of your car, heehe

Last night I saauteed zucchini chunks in olive oil, wilted in some spinach and dumped in the last of that marineara sauce I made, yummo! that dish will be making a 2nd appearance on our table tonight.

here's one of my favorite zucchini recipes... its a potato & zucchini cassarole and is doubly delicious the 2nd night.

slice zucchini, potatoes and onions in rounds approx 1/4 inch thick (separate the onion slices into rings)
spray your casserole dish with non stick spray (or use butter)
place one layer of potato, one layer of zucchini and one layer of onion rings, seasoning each layer with salt & pepper as you desire
spread a layer of sour cream on top and cover with grated parmesan cheese
repeat layers until you're out of veggies, finishing with sour cream & parmesan
bake at 350 for about an hour (depending on the size of your dish) until the potatoes are very tender.

this is a yum yum yummy dish.. i would love to know if anyone tries it... and remember to make enough to have leftovers.. it truly is better the 2nd day!

ALL the recipes sound great! I've printed every one!

An alternative to the Walmart idea is what we like to call "Zucchini drive by"... Leave several in a plastic shopping bag hanging on doorknobs or car doors. Better to do this in a neighborhood that is not your own.

Alison, your recipe is on my "next dish to make" list. I'll let ya know how we liked it. It sounds like a winner already.

Rhonda, Drats, I'm outta plastic bags(never get too many as a rule because I use cloth bags now) Maybe we could send out a plea for the cause, ya think? Lol

Ok the zucchini count is raising around here. I have 2 on the kitchen table, 2 that just were turned into overnighter pickles along with some of my green beans and chili flakes, 2 that are going to my MIL and 3 that are waiting to be diced up for another batch of jam. That's 10 for a 2 days worth of picking. Not to mention I gave away 6 young ones the other day, lol. You gotta keep your best girlfriends happy. Plus I have a dozen bags of shredded zucchini frozen. I think things may be getting out of hand soon, lol

Tomorrow I am going to make a zucchini potatoe soup.

(btw, I wish I had though about entering some of my veggies in our local fair. I had a picture prefect zucchini today. Uniform in shape and size, straight as an arrow and a brillent color but since today is the last day of the fair and this is and afterthought, that stunning squash ended up in that last jar of pickles I made today)As weird as it is going to sound, it was sad slicing it up. Here's hoping for a blue ribbon next year!!!

Hmmm...Zughetti?

Very cool! Just wondering, itlooks awesome like this - did you cook it? Did it get all soft like pasta, or mushy like cooked zuchinni?

Hi Jo, thanks.. Yes, I did a brief stir fry in the bakeover pan with the "Zughetti" lol, I first threw in some chopped garlic into a little chili oil, then added in the zughetti. It came of perfectly done, not a bit mushy. It was not crunchy either, more like just beyond crisp tender. Is how I can describe it.

The neat thing is, tonight I threw the leftovers back into the bakeover pan and gave it all a quick reheating and it was just a good as the first night I made it.

Brenda, my little neat-o-trick to making the "zurghetti" is a handy kitchen gadget called a "Juleene Peeler" mine is made by a company called Kuhn Rikon, there are a swiss company. I love their products. I found my peeler at T.J Maxx.

I FOUND a Julienne peeler (from Farberware) at Ollie's Bargain Outlet today - I went in just for aluminum pie pans, the grocery was sold out - today's the day all the pies are due for judging tomorrow morning (I'm embarrassed to admit I shop there!)

I was thrilled cause now I can make that spaghetti! It was only $3.99!

I just did something I have never done before in my life. I pulled up 3 big zucchini plants while they were still bearing, in the middle of the season.

I haven't been in the garden for 2 days and I had 8 big huge softball bat-sized ones! DH says take them straigth tothe compost pile.

It wasn't easy, but I did what had to be done. Zucchinicide.

Ok Girls, here is yet another use for the dreaded zucchini, lol Actually, I made this tonight to take to a camp get together and the non zucchini lovers were scarfing it down.

ZUCCHINI PIE (Mock Apple Crisp)

4 c. flour
2 c. sugar
3 sticks butter (soften)
1/2 tsp. cinnamon
1/2 tsp. salt

Crust: Cut in with a pastry blender and put about 1/2 of mixture into the bottom of a 9x12 cake pan. Also up the sides. Bake at 375 degrees for 10 minutes.

FILLING:

8 c. zucchini, peeled and sliced very thin
2/3 c. lemon juice
sugar to taste(to sweeten the zucchini a bit)

Cook zucchini in lemon juice, uncovered, until tender, stirring occasionally.
Add: 1 tsp. cinnamon 1/2 tsp. nutmeg and sugar.

Simmer for a while until the liquid slowly evaporates (not dry). Spread filling on your crust and sprinkle the remainder of the crust on top. Bake at 375 degrees for 30 minutes.

I halfed the ingredents because I maade it in a 9" square baking pan(to fit into my toster oven, lol)

Alison, I made your recipe last night, but made some adaptions due to the 98 degree temps (NO way I was turning on the oven to bake this for one hour!) Anyway, I sauted the onion slices and razor-thin potato slices in some olive oil in a frying pan, and cooked sliced zucchini (and one yellow squash) in a PAM-sprayed casserole dish in the microwave with a little water, just till they were tender. When the onions and potatoes started to brown, I added them to the cassrole dish and tossed it all around with a small amount of sour cream, salt and pepper, then stuck the casserole dish under the broiler for about ten minutes, stirring and adding the parmesan at the last 5 minutes. It was awesome, and yes, there are enough leftovers for tonight! Thanks for the recipe; I just could not wait for cooler weather to try it out, especially with the zucchini and squash staring at me from the counter for three days...

yay! i'm so glad you like it! i've been making it for years (more than 20)!
i first had it at my brother's house when i visited him in WA and i was still in middle school!
i love it and it is great all year round... i like your idea and i might just have to try it this weekend.. i just pulled 3 big zukes day before yesterday...

Thank you thank you thank you whoever put that pineapple recipe on here! It is AWESOME! Wow! We use a lot of canned pineapple in stir fry, etc. and this is a super use for my gigantic zucchinis that seem to appear overnight. The kiddos like it just in a dish along with dinner. Thanks!

Hello everyone - I'm late in joining this conversation, but wanted to say I have made the mock pineapple. It came out great. I have just finished making mock spiced apple rings with my "extra" cucumbers. Has anyone tried making pineapple rings using the same concept as the apple rings and the ingredients for the mock pineapple?
