Susan, I had to post to tell you I just made those Mock Crab Cakes. They are awesome!! I twinked it a bit and added in sauteed onion and celery, chopped celery leaves and fresh chopped parsely, worchestshire sauce,some hot sauce and a dab of mayo. You girls have to try this one. It's a winner and a make all the time when zucchini is growing dish. Here is a pic of mine..

I am curious as to how many zuchinnis everyone plants. I am a "Townie" and don't have acres and acres to plant. I planted two and they are doing quite well.
I am anxious to try the "crab' cakes and the Parmesan loaf.
Also, does anyone know the exact spelling? Sometimes I spell it zucchini, sometimes zuchinni...I guess it doesn't matter, as long as you know what I mean!

Hi Amy, my first planting of zucchini is an italian type and I planted 6, in a square plot but I lost one due to something snapping off the topmost of the plant when it was fairly good sized. I have gotten about 10 zukes so far. My other type is a polish variety and is loaded with blossoms and itty bitty zukes ao far, I planted two hills of 3 plants each for that one.

I planted 5 hills of zucchini this year. About the same of summer squash. What was I thinking!
We went on vacation 2 weeks ago. The morning we left I went out and picked all the baby zukes and squashes off the vines. None more than 3 inches long, and I went merrily on my way, thinking I had the problem licked, and congratulating myself for my foresight.
Yikes! Got home yesterday and I have about 30 of the biggest zukes I have ever seen. Think two footballs end-to-end. The biggest ones will go directly on the compost. I am giving my Cuisinart a workout shredding the rest of them right now, and I took a break to see what you gals have come up with... Would love any more recipes anyone has. I've never really been happy with frozen shredded zucchini so will be using as many as possible as soon as possible. Luckily the seeds are not quite mature in these, so they are still tender.

Tracey: So glad you like my crab cakes! I, too, add different things at different times to the recipe...depending on what I have on hand. This morning I boiled zuchini, yellow squash, and onions (all from our garden) to the point of being tender but not done. Then, I put this mixture into freezer boxes. I got 5 and 1/2 quarts! We like to put them in spaghetti sauce during the winter. Susan |

Brenda! I made the Double Chocolate Zucchini Cake! I'm making another one this morning to take to a graduation party. A question for you gals who shred your zukes to bag for the freezer: Do you do a lemon/water soak and then drain before bagging?
Brenda-It sound like the Zuchinni Fairy visited you while you were on vacation! Last week I checked my plants to see if anything needed harvesting, and decided to wait a day or two, as nothing was very big. Two days later, I looked and there was a MONSTER zuke. How in the heck did it get that big in two days? The Fairy playing jokes, for sure. Happy Harvesting, Amy

Ha! I took four to my sister who lives in Columbus. She has a new baby so hasn't been out much... I shredded, vacuum-sealed, and froze 9 2-cup batches last night. Make zucchini lasagna last night for dinner, and making zucchini bread today.... If hubby wasn't waiting on a cherry pie I would make the cake too. I suppose I could make the cake and freeze it for later.

I have made the zapple muffins and the double chocolate zucchini cake and both were great. I added walnuts to the zapple muffins.....Now, I have a thought, do you think it would be possible to make a zapple pie? I think I am going to try it!! Will let you know how it turns out!

It seems the zucchinis are doing their thing in reproducing heirs to the zucchini thrown in my garden. And yes, as crazy as it sounds, I am picking the blossoms off to encourage reproduction. A few of my friends don't have gardens, so I thought I would share, as they like the younger ones most people never give away. Today I came up with a recipe for a "Savory shredded zucchini turnip bread pudding. Tastes better than it sounds, lol

Susan, Yikes, sorry I missed your reply. That about sums up how I cook,"depending on what I have on hand" lol. I've been shredding zucchini and freezing it as well, to ensure I have some for the comming zucchini-less months. Today, I made a batch of "zucchini jam". I used apricot jello, diced zucchini and crushed pinapple. It thickens up beautifully in the fridge and then the extra goes into the freezer.

I was looking for something else and came across this:
Zucchini orange squares
1 1/2 c. unsifted flour 1 c. sugar 1 tsp. baking soda 1/2 tsp salt 2-3 tsp. cinnamon 1 tsp. baking powder 1 c. grated, drained zucchini 1/2 c. frozen orange juice concentrate, thawed 4 T. vegetable oil 2 egg whites, beaten
Mix dry ingredients and stir in zucchini. Add juice and oil to beaten egg whites and fold this into dry ingredients. Pour into a 9 x 13-inch greased and floured pan. Bake at 350 degrees for 40 minutes. When partially cool, drizzle with icing made of powered sugar, butter and orange juice, very thin.
I haven't tried it yet, myself, but the lady from our church who put it in our cookbook is a very good cook.

Hi all, I am going to try to Mock Crab Cakes for sure!
I just posted this elsewhere as well, thought I woudl add the zucchini bread recipe I have used for 20+ years, to rave reviews.
You can grate the zucchini and freeze it in 2-4 cup amounts in Ziplok bags to make the bread throughout the winter. Just drain off part of the liquid before using the frozen product.
Zucchini Bread Mix together: 3 eggs 1 cup salad oil 2 cups sugar 3 tsp. vanilla Sift together, then add to above: 3 cups flour 1 tsp. baking soda 3 tsp. cinnamon 1 tsp. salt 1/2 tsp. baking powder 1/2 cup chopped nuts (optional) 4 cups grated (fine) zucchini - (DO NOT PEEL)
Grease and flour 2 loaf pans (8x5 inch). Distribute batter into each loaf pan and bake 1 hour at 350 degrees. Remove bread loaves immediately from loaf pans and let cool.

Last night I made Zucchini Parmesan. You make it the same way you would eggplant parm. I let one of my italian variety zucchinis grow to see how seedy it would get. I was amazed, hardly any seeds. It was just like the smaller sized ones I normally pick. So, I sliced this one into rounds, put the slices in an egg wash, then bread them with bread crumbs and panko and browns the slices on both sides in some olive oil. I made a marinera sauce and layers the zucchini slices with the sauce, some fresh cheese curd (to subsitute for mozzerella cheese) and sprinkled the layers with parmesan cheese. Then popped it into the oven to bake through.
So I found a new use for those "oversized" zucchini bats, lol.

someone once told me the best solution to the zucchini problem is to slowly drive around the parking lot at Walmart, and when nobody is looking, open a car door and throw in some zucchinis and head out before you get caught. |

Sherri.. just my luck, the cars alarm would go off as soon as my hand touch the car door, lol.. The local headline would read something like this..."Deranged gardener tries pawning off surplus goods on innocent drivers" a source who is a relative tells police, "Mrs. Soandso really wasn't tring to break and enter with the purpose of stealing the cars, the zucchinis made her do it.." (as more information roles in on Mrs. Soandso's metal state, the public is warned to use caution when comming back to their unattended vehicles.
Carol Sue, if you lived closer, I would make you a plate of any zucchini conncotaion on the menu, oh yeah, as send you home with some of the surplus, lol
