I completed the tasks for the beginner and intermediate Carpe Cocoa: Seize the Chocolate! badge yesterday. I tried to apply for my badge today, but it wasn't up yet. Does anyone know how long it takes for the new badges to show up?

I thought I would share a couple interesting tidbits with you guys :) My husband enjoyed listening and learning with me as well. I couldn't read the book suggested as our library didn't have it, and I didn't want to order a new copy from the bookstore at the price they were asking. So, I found one an inexpensive copy of a book called "Natural History fo Chocolate" by D. De Quelus for my Kobo. Some interesting things that stood out to me from my readings was that the hard kernels, before they are ripe, are hard and white. They are useful for quenching thirst - so people suck on them, but you wouldn't want to bite into them as they are bitter! I also found it interesting that the Spaniards and Portuguese were the first to whom the Indians communicated the use of cocoa nuts, which they then kept to themselves. So, when some Dutch came along, ignorant of their value, out of contempt threw them into the sea, calling it "Dung of Beasts"! It's said that cocoa prolongs the age of the elderly. I had no idea that there was such a process in drying/processing the cocoa - how the kernels need to sweat (ferment) and the more they do so, they loose more weight and bitterness. Then comes the process of drying, then roasting, then crushing...and then placing in molds for 5-6 months, followed by adding flavourings etc. and then putting in the new molds. I found it interesting to learn how the dark chocolate has the highest percentage of cocoa solids & cocoa butter. Sugar and cocoa bean poweder or added - it must have a minimum of 75% cocoa, whereas the white chocolate is a maximum of 35% cocoa, and is made from no cocoa solids - only milk, sugar and cocoa butter. As for milk chocolate - contains milk, powdered sugar, a small percent of cocoa solids and cocoa butter. For my recipes for the intermediate badge, I made chocolate truffles and double chocolate snowquakes. They both turned out delicious! I'm a bit addicted to the truffles now...I need to make another batch ;)

Did you add any flavoring to your truffles? I've been trying to come up with some different flavor combinations but nothing too out there.

Debbie, I just used vanilla. I'm planning on using almond and peppermint for the Expert.

Sabrina, the requirements aren't hard, I found. I found it enjoyable!

I haven't been on here as much as I used to be. It is fun catching up with you all.

I got my book 2 days ago and read the intro right away, but since I was (stomach) sick the past couple days I couldn't think about reading a book about chocolate! Now that I'm feeling better I plan to dig into it this weekend!

I really like this book. I love reading about food history, and I especially can't wait to read about the church as it relates to chocolate drinking. Does anyone remember a few years ago Starbucks had a seasonal menu with drinking chocolate on it? I wish that I would've tried it when they had it, but the coffee always won out for me.

I sure wish I could have gotten a copy of the book you all are reading! I enjoyed mine...was a bit dry, but I still enjoyed reading it. Erin, will you share with us when you read about chocolate as it relates to church?

Debbie, I think the Starbucks chocolate was probably confusing for a lot of people. It wasn't like hot chocolate, as I understand it, probably more like what this book references. I am enjoying the history!

I just found the book for the cocoa badge at a sale so I will be starting that as soon as I can get the time. Hopefully I can get it done and work on the rest before February is through. A good month to make the chocolate and ganache. At least if I get it wrong my son will be around to tell me what I did wrong! I know I've told you all he is a pastry chef so I don't get a chance to do anything in baking much anymore.

I have the truffles left to make...trying to think of some interesting...but still edible....combinations! I like my chocolate simple.

Debbie, I got the books!! Thank you so much! I look forward to reading about chocolate and making some star wars amigurumi!!

Joyce, it may take me a couple weeks to read this book. I am currently reading a book for a review that I'm almost done with and then will start the chocolate book but it is much larger than I expected!!!

You are welcome! I made Han Solo and ended up using a different head bc the directions for that one were not coming out right...his hair color was all over the place! But other than that, the directions have been ok.
