My mom got one of her country magazines last month and it was full of all these cupcake recipes...I think I'm going to have to try every one! Thanks for the link to this site, so many more to try...lol

Oh Boy!! This could be trouble!! Everything on this site looks so yummy! I will have to save this one. My DD will like this too! She loves to cook & cupcakes are already a fun thing to make. All the pictures on the site are great too. I like how they photo most of the steps.

Looking at this blog made me hungry for cupcakes. Good thing I had already made oatmeal-chocolate chip cookies this afternoon or I would have been slipping little pink papers into muffin tins! Maybe tomorrow. ;) Have any of you tried MJ's cupcakes made with the Farmgirl Budget Mix? They are very tasty. Just a nice, plain, soft cupcake and the icing is very yummy. Hmmm- I think I will make those.
Well, there goes my diet!

I'm making two different cupcakes today...a black bottom cupcake with a cream cheese filling and a chocolate one with a chocolate ganache frosting and I'm going to try using half spelt flour half regular and see how they turn out.
Question, with the ganache it uses whipping cream, after they are frosted would the cupcakes need to be refrigerated because of the dairy in the frosting? I don't think I've ever made a frosting with dairy in it that wasn't consumed within the day so I'm not sure if that makes a difference with them probably lasting a few days.

Liz, I'm not sure if ganache needs to be refrigerated for health/spoilage reasons, or not, but my oldest son loves to make it and do a black forest layer cake - 'ya know, with cherries and all, and the ganache holds up better when refrigerated. It stays firm, and doesn't get weepy and melty. Happy baking!
