Happy new year, everyone!

I've been reading alot of the threads under Kitchen. I wanted to tell you that I tried the sourdough starter that Mary Jane has in her book...never dreamed it would work without adding yeast, or some sort of starter mix...but it did! I've been using it for two weeks now. I add back 1 cup of pure water and 1 cup of flour (1/2 whole wheat and 1/2 unbleached organic), setting it out for 12 hours, and it has been wonderful. I made a batch of sourdough pancakes (recipe from King Arthur cookbook), and today I mixed up a variation of the King Arthur cookbook recipe for sourdough bread and used it tonight for homemade pizza crust. It was wonderful. I am so excited...this is the first time I've had success with sourdough and wild yeast! There are alot of wild things at my house, so go figure that there would be wild yeast (lol).

Happy New Year to you too Val! That is one of the things on my to do list this year too. I am glad that it worked for you & turned out so well. I bet it tasted great!

I never thought of making pancakes with sourdough. I will have to try that. We like to make pancakes a lot. Usually buttermilk with chocolate chips. My DH has also been wanting to make the starter... he will be even more inspired once he finds out we can make pancakes too! Thanks!

Whoa HO, Val! I've never made the starter and am impressed. My King Arthur starter has always been able to "re-start" despite all neglect I show it. I DO make pancakes, with a Nancy Silverton recipe that uses no extra flour or milk--in other words, it nicely uses up a couple of cups of the starter. If you're interested, I'll post that recipe. Is your King Arthur cookbook the new whole wheat one? I have that... and love it, but confess I've not yet done much with it. Sourdough is said to be very healthful... all that good bacteria! Isn't that a nice bonus?

Hey, Ann,

My cookbook is the old one, but I use it constantly. There aren't, in my opinion, very many cookbooks that equal that one for both simplicity and good recipes. Sure, you can post the pancake recipe if you want. I'm always up for a good recipe!

SOURDOUGH PANCAKES from Nancy Silverton's "La Brea"
Makes about fourteen 4-5 inch pancakes

1 pound 2 oz. (about 2 cups) white starter
2 tablespoons maple syrup
3 tablespoons vegetable oil (plus extra for oiling griddle)
2 large eggs
1/2 tsp. sea salt
1/2 tsp. baking soda
1 tsp. baking powder

Place liquids in a large bowl and whisk to combine. Place a fine mesh strainer over the bowl, and push through the salt, soda and baking powder; whisk. Batter should be thicker than heavy cream and feel very elastic.

Preheat griddle, oil lightly, and pour about 1/4 cup batter for each pancake. Medium high heat, flip when bubbles cover the surface.

Note: Starter should have been fed 8-12 hours before beginning...
