Hi there, Di -
I've been so busy deciding who to favour with my copies of the book that I just sat down this weekend to actually read through the recipes. There are several I want to try; one in particular from Phils Ann sounds really good, using cannelini beans and stewed tomatoes...mostly to use up those particular ingredients in my pantry! Just trying to decide which kind of meat would best accompany this dish. (Non-vegetarians here!)

Yummeeeeee Karen P!!!!!! Rave reviews tonight when Meggie and I baked your Crispy Herb Baked Chicken on page 8-15. I caught hubby in the kitchen afterwards getting the very last crispy potato morsels from the pan. Deeeeelish. Tomorrow night, Lima Bean and Sausage HOT POT from Hideaway Farmgirl (Lima beans already soaking.) What fun. I think this is just the VERY best kind of cookbook. So many thanks to everyone. Diane, your spinach pesto is on my soon-to-try list, as soon as I get to the one grocery store around here that has decent basil this time of year! I plan to use it with pasta.
Jo, I think the recipe you refer to goes well with simple leftover chicken or with salmon, etc. Or, anything mediterranean, of course.

I hope you enjoy the pesto Ann. It is used around here for everything...on pasta, with fresh tomatoes and asiago grilled on a baquette and my favorite, an alternative for pizza sauce! It is the true taste of summer to me. A bonus, it freezes well. There are so many good recipes, I don't know where to start! Di

I made the rum balls - around here they are known as "Christmas cookies" Hubby and his brothers usually just dump in lots of rum and a few crackers, plus enough Karo to stick it together.... It was a relief having the actual recipe and limiting the amount of rum!!!!!
They are great and even though I store them in an airtight container I couldn't help sampling - they have just enough rum. Perfect!

We had the spinach pesto from Diane last night with penne... and what a winner. It is delish! And, there's enough left over to freeze for a future pizza.

I had every intention of making Karen's Enchilada Lasagna tonight but after facing a flat tire when I got out of work, I just wasn't up for any cooking so it will have to wait for another time. I've had the best time reading through the recipes and now that the holidays are over, I'll have some time for cooking.

I made Ann's (PhilsAnn's) Roasted Winter Vegetables and they get two big thumbs up! I made the whole recipe and gave one whole pan's worth to my parents. DH and I are finishing up the leftovers of our pan tonight with our V-day dinner. They are wonderful and it's soooo good to have a new way to make veggies in the winter. |
