Krista, BBQ sauce works!!!!!! I've never had any luck with banana peppers, how do you keep them from getting really soft. My carrots are still in the ground so probably won't be doing those for a week or two.

There is never a road so long that there isn't a curve in it.

Krista, what recipe did you use? I cooked some tomatoes in slow cooker overnight, I opened a jar, ick. To me it taste burnt. My husband says he likes the taste. I'm thinking next time I need bbq sauce I'll use the burnt tomato sauce. I need to can bbq sauce but have't found another box of tomatoes. I can add worcestershire then pour over the chicken and bake

Theresa, I learned the hard way that they need pickling crisp. My first year canning them I didn't use any and all the banana peppers were soggy. I couldn't eat them. It was just wrong when they were meant to be crispy. Since I have started using the pickling crisp they stay nice and crunchy.

Tara, this is the recipe I used

I used yellow bell peppers instead of red and banana peppers instead of green bell peppers. And I roasted the tomatoes in the oven to remove the skins rather than boiling them and I also roasted the peppers and onions. My guess is that all the roasting is what changed it so much. Other than that everything else was the same.

I bought an Amish canning book and one of the chapters she discussed the pros & cons of Tattler's reuseable lids. Have any of you researched reuseable lids? I'm unsure whether I want to try them or not. She did say that she still uses the Ball lids too and suggested if anyone wanted to try the reuseable lids to do half the canning batch with the Tattler's lids and half with the Ball lids until you are comfortable with the Tattler's lids.

I've used Tattler and they did fine I guess. There is a learning curve for sure as to the tightening.
I would say the regular lids are easier and if I can get them on the cheap, I prefer them.

I won some cute bowls for French onion soup at an auction and am going to make some as soon as it stays cool here. Using Jacques Pepin recipe.
Never thought about canning it, but Hey! Why not?
