Squash is one of my favorite things to cook. Here's a squash casserole with a rich cream sauce that sounds delicious.
Squash Casserole (from Mrs. Jack Campbell)
2 pounds tender yellow squash 1 medium onion 1 bay leaf 1 tablespoon parsley flakes 1 tablespoon sugar 2 teaspoons salt 1 1/2 cups hot, rich cream sauce 2 egg yolks, well beaten 6 tablespoons grated Swiss cheese fine toast crumbs salt and cayenne pepper to taste
Combine first six ingredients and boil until tender. Remove bay leaf and strain excess liquid. Add to cream sauce, add well beaten egg yolks and 4 tablespoons grated cheese. Place in buttered casserole and top with remaining grated cheese mixed with toast crumbs. Dot with butter and bake in 350 degree oven for forty minutes or until browned on top. Serves 8.

What an awesome recipe book to find MaryJane!! I MUST try the raspberry tarts and the German blueberry pie!! Yum!!! Thank you for sharing!!! Ahhh, a couple more weeks and blueberries will be ready here!

I shared the scrambled egg with cream cheese recipe with my sister who is a gourmet. She said it sounds very much like the eggs she had when she was in France. Makes a great dish for company.

I am going to try a new recipe from MaryJane's Cast Iron Cookbook this Saturday. I will share what I make and post a photo. Every recipe that I have tried so far has been wonderful. Now I keep buttermilk as a staple in my fridge in order to make new recipes on the spur of the moment.
Hehehe, Grace, I would certainly love to have you come for dinner to celebrate the Jubilee!! It would take awhile with Delta to get you here , but it could be easily done!
