If your like me and hate wasting and throwing things out, this recipe is a must try. It's simple, easy, and you can make it in a crock-pot too! It is now a family favorite in our house and perfect for those long, cold fall/winter nights. Enjoy! ~Hannah
Carrot-top Soup Serves 6 by Rosemary Campiformio
½ cup butter 1 ½ cups chopped carrot tops, firmly packed 6 cloves garlic, minced 1 lg red onion, diced 4 lg potatoes, peeled and cut into ¼-inch chunks ½ tsp. salt ½ tsp. pepper 1 stalk celery, diced 2 carrots, diced 4 cups chicken stock or water Salt & pepper to taste
Melt butter in large pot over med. heat. Add chopped carrot tops, garlic, onion, potatoes, salt, and pepper Sauté for 10 min over med heat stirring frequently Add celery and carrots and stir for an additional minute. Pour in stock and bring to a boil. Immediately reduce heat to a simmer, and continue cooking until all vegetables are tender. Add salt and pepper to taste and serve immediately.
