Made 8&1/2 pints of zucchini relish today. quote:

We've been busy in our house! In the last 5 days we've done 14 quarts and 7 pints of peaches, 28 quarts of pears, and 35 quarts of sweet corn. We have the last of the corn to process today. This week is county fair week here, so I won't get much done this week. Next week I'm hoping to start in on all things tomato. Then later in the month apples. My kids are joking that Mom is acting like a squirrel... storing up things for winter. HAHA!

So far this year my husband and I have done Strawberry Apple Jam, picked, pitted and froze 70 quarts of sour cherries, (our two trees were loaded) will make the juice for drinking later, froze 20 quarts of summer squash, canned 55 pints of pickles, picked used about 24 quarts of blackberries in various ways, canned 48 quarts of green beans, 27 quarts of peaches, a batch of Peach Pineapple Jam, and did up 10 quarts of corn.
I also put 5 gallon size bags of whole, unpeeled peaches in the freezer. I'm told they will peel easily and are perfect for pies, cobblers and jams when needed. We'll see how they turn out. I have never frozen them like this before.
Have spaghetti sauce to do yet and grape juice. I'll be canning chicken also. We get them from an Amish Farm near us.
Sounds like everyone is busy with food. Sure is a busy time of the year.

Got the pickles and relish done. I will be picking fruit today so the White peaches will be worked on later today. I plan on making White Peach & Saffron Jam and Vanilla Spiced Peach Jam.
Brenda, the man we purchased peaches from told us to freeze whole in baggies and when we wanted one, take it out (no thawing), run it under water for about 3 seconds and the peel slips off. I have some in our freezer to try that way too :)

Would love to start canning some marionberry jam but tomorrow I'm getting together with another MJ sister and I'm going to teach her how to make some herb and cheese bread. I love to make this. Although it'a a yeast risen bread, it only takes an hour to complete before she goes in the oven. You use strong flavored cheese in it and some herbs. I make a version of herbes de Provence and look those in this bread. We're having soup for dinner tomorrow night, so this bread is perfect. We're about to have a gully washer of a rainstorm tonight and tomorrow. Good day to stay in, make bread and soup. Fall is coming.....!!!

Have done dill pickles, salsa, blueberry jam, tomatoes, relish, and bread and butter pickles.Also made a crock of saurkraut.

~White Peach & Saffron Jam ~Vanilla Spiced Peach Jam (disappointing) ~2 dozen quarts of Grape Juice
I need to make more of the White Peach & Saffron Jam it is so good! Also prepare some juice for Grape Jelly :)

Green beans. Starting pickles, trying a new low-temperature pasteurization recipe as a last ditch effort for crisp pickles. Also dehydrating an insane amount of elderberries and basil (got a screamin' deal on a pound of basil leaves), and something else I'm forgetting.

Chili. We just used our last jar and so it's time for my yearly batch. It makes about 20 lbs and I can it in pints and half pints. Pints get thrown in with a can of ranch style beans for chili with cornbread for supper and half pints are used on hot dogs. It's an all day chore but it sure is good the rest of the year!!!

What's your chili recipe? We've been hunting for one that the hubby and kids like. :)

Did 9 pints of.green beans today. Wishing my kitchen was bigger. I had to use a hand towel in my pressure canner to keep the last pint from juggling in the canner.

So far this summer I've done: 8 pints of peas, 30 quarts of cabbage, 6 quarts of tomato juice (need to make some more), 9 quarts of French green beans, and froze 10 or so packages of corn and froze some green peppers too. I use a water bath method. That's all my family has ever used. I can for my parents and my household.
.jpg) Wanting a new type of stove. I now do not like flat tops. I'm always scared I'm going to crack the top with all my canning. I think I was canning cabbage when I took this pic.

I am canning Pear Sauce right now. Will do pear halves as well. I have also done pickles and Dill Relish. Still waiting on tomatoes.

Just took some marinated roasted red peppers out of the canner. Yay! Yesterday was Vanilla Peach Butter and Maple Vanilla Peach jam.
I have a box of pears waiting for tomorrow. And still need to get about 100 pounds of tomatoes. Sure wish the weather was cooler!

I've only done some Apple Butter this year, but I'm hoping to do some more after I see whats available at the Farmer's markets in the next few weeks.

Ok tomorrow I can marionberry jam!!!It is my favorite blackberry. I froze the berries cause they give so much more juice after they've been frozen. Makes such awesome jam. Have to all the berries as this is a popular jam in this house. I wish I had enough to make a pie. Mmmmm...who'd know if I made a pie! and not so much jam...... you gals won't tell.

I have made wild choke cherry jelly, wild plum jelly, canned spiced apples, canned peaches, salsa. I also have froze peppers, raspberries, and onions. I also dehydrated cucumbers, zucchini, and tomatoes. Getting ready to do horse radish and want to find a good recipe for pickled eggs. I ate them at the local show building as a teenager. Anyone have one they want to share? |
