I just saw in a recent issue of Midwest Living, a recipe for blueberry ice cream. Yum, what better way to use up all them blueberries...

You could always wash them up, lay them out on a cookie sheet and freeze then transfer to freezer bags for future use when you feel more like dealing with them. Or leave them that way until you want to make a batch of blueberry pancakes or syrup or ice cream or fruit salad or I could go on and on LOL.

Every year I make blueberry jelly, blueberry syrup, and freeze the rest. This year I am also making blueberry jam in my jam maker. I may even make some of my blueberry/strawberry muffins too. I also have another cake recipe to try.

Kristina,

I posted a Blueberry Zucchini Bread recipe under the Zucchini thread. It is delicious and I have gotten rave reviews on it. Maybe you could try that and freeze some too.
I agree with Winnie, a delicious dilemma :)

He he! I do have a "delicious dilemma" on my hands.
I made one batch of blueberry jelly yesterday. I run the berries through my sauce maker then drip it in a jelly bag. It's so much easier that way. The bread sounds like it would be a great after school snack. I'll have to try it.

We picked our Blueberries and got quite a lot. We put them in freezer bags at 4 cups a bag. I made Blueberry syrup with some of them. Easy and yummy good.
4cups Blueberries
1cup sugar
I cup water
4tbls fresh lemon juice
Bring to soft boil on stove--
Mix together
4 tbl water and
4 tbl cornstarch
bring to soft boil and then simmer for about 5 minutes until syrupy.

We had buttermilk pancakes for breakfast and then lunch too. Great wih syrup!

YUMMY

It is 8am here and I am looking at those pancakes smothered in blueberry delight and thinking, I sure wish I was at her table this morning!! That regular oatmeal is looking really boring!!!!

The blueberry syrup looks delicious...and Kristina...I do love blueberries. I put up a gallon of blackberries this Summer...and today I am drying apples...does anyone ever make apple stack cakes. Brings back memories of my mom and grandma...we used to have them at every special holiday.

I haven't made one for a while. My sister has the recipe. Will get it to you in the next few days. They are delicious. Just now put a mess of fresh green beans in the pressure cooker for dinner. So delicious.

Kristina, you made me laugh out loud! I know that feeling though when there is so much waiting for you sometimes you don't want to think about it. All the blueberry goodies here sound so good, ladies. Makes me miss my gramma's blueberry pie. Ahhh... the days of summer.

I ended up making 2 blueberry pies too. I actually think I may increase the 20 lbs. to 30 next year, so I can dehydrate more for homemade granola bars. At least this year, with a terrible garden year, I don't have tons of tomatoes all over my kitchen at the same time, like all the other years.
