Well this might be stupid but....my friends and I canned tomatoes last yr and they were great...we over did it someone told us because we blanched them and then after we peeled them we cooked them for 20 more min...dont ask why we dont know...and the packed them and water bathed them..they were great...now this yr we did what another friend told us to do...DONT cook them the extra 20 min..So we did the normal and packed them and water bathed them as directed...well I went over to my friends and was going to pick up my portion of the canned tomatoes...And I saw that some of them had bubbles on top of the jar..And I thought they had spoiled...So we emptied 4 jars that looked bubbly...NOW my question is>>> was this the start of spoilage of just air in the jars?? Deis we do the right thing and dump them???

When you opened up the jars, did the bubbles fizzle at all or move? I've always been told that bubbles in your jars after canning is from not "bubbling" the jar well enough - where you stick a plastic spatula or tool down the sides to get out the extra air bubbles. As long as the bubbles don't move or fizzle when you pop thne seal, and you processed the jars the right amount of time, producing the proper seal, then the bubbles are completely benign.

As for raw packing or hot packing the tomatoes - I prefer hot packing! (Cooking the tomatoes a few minutes before putting in the jar). I find that when I raw pack them, they cook down in the canning process, leaving more space than when I hot pack them. I like to get my jars as full as I can, so that there is plenty in the jar when I need it :) JMO

Thanks Shannon...we didnt do the spatula thingy...and only one of the jars that we opened fizzled..so thanks for the info...i will relay this to my friends.

I raw pack tomatoes but as mentioned you do lose some head space. I have never had any problems with raw packing the tomatoes. BUT do what you feel comfortable with. If you liked how things turned out the first year, stick to it.
Everyone has different opinions on what is best, as long as it is listed as a safe method, pick out what works for you :)
I am not sure about bubbles, I don't recall that happening with my tomatoes??

I canned tomatoes two years in a row. I can't figure out why they float. I tried two different ways and it all floats to the top and I have about 2 or 3 inches of clearish liquid at the bottom. What am I doing wrong?

MY dear MIL turned me onto this method. Raw pack Peel quarter tomatoes add lemon and salt in the quantity Ball canning books says. Then take the peeled quartered tomatoes and shove them into the jars keep adding tomatoes until their own juice covers them. Process as the book says. I always have full jars and the keep really well and taste great.

I always bring my tomatoes to a rolling boil for a few minutes before putting them into the sterilized jars.
