Hi all!
It's that time of the year again - casserole time! I have tons of tried and true recipes for the crockpot and for soups, but I'm lacking in good vegetarian casserole recipes. Does anyone have some good ones to share? I love to throw a bunch of stuff in a dish and bake it a good long time (it's nice to clean up *before* dinner while it's baking too!).

Catherine, I use tofu in place of meat in any casserole. works best if you use firm or extra firm tofu, and crumble with your fingers into the skillet to brown. I have a great enchilada filling recipe (black beans, tofu, tomatoes, spices) if you are interested. |

I have some pretty good winter root vegetable casseroles that I used to make when I was a vegetarian, but my husband won't TOUCH a turnip, even if it would save his life! My favorite was a gruyere cheese, pasnip, turnip, leek and russet potato casserole. Really good for cold autumn and winter days. I posted something I made up on the Kitchen section that you could totally adapt to vege...it's a shepherds pie, only you use mashed sweet potatoes and butternut squash for the top, mashed with maple syrup and a little butter, and you could used vege crumbles or tofu for the inside, sauteed with onion, garlic, curry powder, cayenne, s & p, corn and peas. Bind it with a little cream and an egg, if you like. Bake it. It was a really great combo of savory/sweet. I used to be a vegetarian (for 8 years) and while I was making it, I thought it would be a good adaptable dish. Give it a shot and let me know what you think....I pretty much season to taste, so it's versatile, too.
Just think of all of the roads there are...all of the things I haven't seen....yet. |

Lizabeth, if you could pass that recipe on to me, I'd surely appreciate it.
I'm hoping for some veg recipes in the cookbook as well. I set in a meatless soup recipe but some casseroles would be much appreciated too.
I have a Mexican Lasagna recipe (great weeknight meal, cooks in the microwave) if anyone's interested.
