I mean... There are only three of us, and you can't just make a few. I usually make like 300 or so at a time, and then my hubby delivers some to some of his brothers and uncles who are always thrilled because many of the wives either don't make them or have passed away. Thankfully, my mother-in-law taught me how to make them "right," as they say, just like her mother-in-law taught her! :) Anyway, I'm wondering if I might be able to pressure can them successfully? I think it'd be so great to just make a ton of them up ahead of time, and then we can pull them off the shelves whenever the mood strikes. Plus, I would love to be able to give them as holiday gifts in sealed jars all tied up with pretty red bows instead of having to rush around delivering them fresh as we do. Thing is, I'm not sure if they'll hold up well...and I'm concerned about the butter in the sauce - might it go rancid and ruin everything? Have any of you ever done this? How did they come out? What do you think - should I give it a try???

Thanks so much -

Nini

LOL! I suppose we could put you on the delivery route, Lisa! ;) Are you terribly far from Pittsburgh?

Only about 6-8 hrs, but that is a small distance when it comes to stuffed grape leaves!

...and why don't you just take a scenic tour through north Idaho with those, I'll be happy to do a taste test for you I've had them pickled out of a jar, so I assume that you could can them and I've heard people say that you can can up butter. Hopefully some one can answer this for all of us! I sure would like to can some too!

I don't know why they could not be canned. But, on your way home from Idaho, you could stop by north central Iowa and drop off a jar! I could even barter you something.

LOL!! You all are too funny! How about this: when I finally gain the courage to try to do this, if they come out good, I'll send you each a jar with a big ol' smiley picture of me and Hershey's Hugs and Kisses! :) I would LOVE to come see all of you, though... I'll have to think about planning a "tour" to see all my farmgirl sisters after my son graduates... That sure would be the cure for empty nest syndrome!!! :) Hugs - Nini

Oh, wait... maybe it's just the grape leaves you're wanting? LOL! That's okay, too! :) Love you all!

I'm worried that they may not be able to be safely canned, so be careful. You could also fully cook them and freeze them in batches. Anyway, it'd be so lovely to meet you *hugs* with or without grape leaves.

You're a peach, Annika! I'd love to meet you in person someday, too! My girlfriend's mother said she's concerned about them not being safe when canned, either, and suggests I just freeze them. :( Oh well, better safe than sorry! Thanks girls!!! Hugs - Nini

Well... Just a quick update for you all. Yesterday we were with my husband's family. The older women said that his grandma did in fact can stuffed grape leaves with no problem. They didn't have the recipe or timing to cook it, but they said to follow the canning directions for the lamb. I'm going to try it! I'm planning on making a whole big batch for Christmas, so maybe I'll make them a little early so I can process them for gifts.

How spoiled we were, too - it was my DH's uncle's 86th birthday, and all the women made traditional Lebanese dishes, and plenty of them, too! We ALL got big ol' containers to take home afterward! (Not a single grape leave left in sight, however! LOL!) I am in HEAVEN! They also had the most delicious walnut hummus from a local Lebanese restaurant - I had never tried it before! I am dying to find a recipe - I'm going to post to ask for one! :)

I'll let you know how the canned stuffed grape leaves turn out! From what the ladies said, they should be awesome! Can't WAIT!!!

Hugs -

Nini
