Any suggestions? Most recipes call for large amount and I simply have this puny little one from the CSA. What do I do with it?

Our boys love eggplant brushed with olive oil and balsamic vinegar and grilled. Yum!

dredge in flour-egg-breadcrumbs, fry, then put marinara and then melt cheese.

Eggplant parmesan is really good, but eggplant slices fried with a little olive oil and then put pesto on....yum!

Slice, & cut in 2 inch wide strips, sliced thin. Saute in a cast iron skillet with some oil until browned. Remove from heat, allow to cool slightly. Chop a few garlic cloves, add to the eggplant, maybe a scallion or so too. Add a tablespoon or so of mayo to coat. Top on some crusty bread like a bruschetta.
Or make a baba ganoush.

I grew and ate my first eggplant a couple of years ago. Had never eatten any before and made some eggplant parmesian with home made marinara. MAN WAS IT GOOD! I've decided eggplant is good and not something to fear any more. Enjoy it however you decide to cook it.

It's great in eggplant with feta soup, and also Mediterranean vegetable stew, yum!

I like to brown it in olive oil, and add it to cold pesto with sundried tomatoes.

What else is in the CSA box? I would do a big veggie saute' with the eggplant, zucchini, yellow squash, onion, red bell pepper, and tomatoes, some salt and pepper, maybe some basil, and serve that over a small pasta such as orzo, or rice noodles, or a grain like quinoa, bulgur, or rice.
