What exactly does dandelion jelly taste like? Just today I made my first batch of violet jelly from a recipe that I got from Jonni. Personally, I've never made jelly before so I'm very excited to see how it turns out. I saw on that recipe that you could use dandelions in place of the violets so I was curious as to what that tastes like. Glad it set up for you this time!!

Geez! So many neat ideas! Queen Anne's Lace jelly?? I've never heard of these things before. I don't think my violet jelly is going to set. Do you know what causes that? Not sure what I did wrong. Could I have cooked it too long? |

Emily, my dandelion jelly didn't set the first time I tried it. While I've never tried violet jelly (I will be now!), I'll tell you what I did for my dandelion jelly. I added a package of pectin. That may be cheating to some, but I'd rather have jelly that gels. Call me picky that way! LOL
Christina, I can't wait to try the other jellies you mentioned. I love making jams, jellies and fruit butters, and finding something new and unusual is so much fun! Thank you so much for sharing these!

I used pectin in my blackberry jam. It isn't really necessary there but it's faster. Five minutes instead of twenty to gel. I think I read that to gel there has to be some acid, so adding lemon juice to things low on natural pectin helps. But I've never made any flower jellies, so this may not apply. I sure would like to, tho. Esp dandelion. I'll have to wait for the new crop. |

Someone had asked about the taste - it tastes like mild honey. I absolutely LOVE it! We made gluten free dandelion bread with some more blossoms yesterday, too. That recipe will be up soon.

I made some for the first time yesterday! It is really really good. My daughter likes it better than the violet jelly I also made. I added some yellow food coloring (cheating a bit, I know, but the color is sunny) and now my family will all try some. Next time I may leave off the food coloring. But the taste is delicate and wonderful. |
