Just bought a dehydrator to make chicken jerky for my dog, mostly, but plan to try fruits in the summer. The directions with the dehyrator say that after drying anything to put in the frig or freezer. Is this necessary? I thought the whole purpose of drying stuff was so you could store in jars or bags?
I know this particular machine has instructions that I think are over-kill, to protect them from getting sued, I think. Example--it says cook the chicken before dehydrating--okay, I can see that, to prevent salmonella, it says. THEN it says, after it's dehydrated, bake it in the oven again for 30 minutes, "to kill any salmonella." I think that is ridiculous, so I am wondering if their instructions on freezing or refrigerating dried fruit or vege's is necessary. Thanks for any help.

Rose, if you go over to my blog and go to the Alphabetical Index of Posts, I have a whole series on dehydrating. You do not have to put things in the freezer and can use a food saver to put them in jars and vacuum them to get the air out if you want. I keep all of my dehydrated veggies in jars and use them all year round. Even jerky can be kept in jars or bags. The one thing that you have to be careful of is any meats other than jerkied meats. You can't dry meats safely unless they have been salt jerkied with a mixture. Plain meats can be dangerous with bacteria. Hope that helps!!
