Hi sisters, I have a question.
I oven canned several pounds of oatmeal yesterday.
Just when the timmer went off and I turned off the oven the phone rang. By the time I answered it, took a message, found my husband outside in the barn, the jars had cooled.
Do the lids have to "pop" as with regular canning or is just heating the oatmeal for l hour good enough. Should I put the bands on them and forget it or do I have to reheat and reseal?
If anyone knows the answer I know it is one of you.

dont you put the bands on and tighten down before processing. then do not remove bands till jars are totally cols

Yes they do need to pop or you will not have an air tight seal and oxygen can get in the jar and start the breakdown of the food inside. You can put the jars back in the oven and start again or if you plan to use the oats in a few weeks I would not worry about it. But if you intend to keep them on the shelf for months at a time, reprocess them. Hope this helps.

Jane, I am in awe of your blog...I am still reading after an hour...thank you for sharing it with us....I see so many things that I've wanted to do in your blog. We just bought an old wood stove which will be hooked up next winter. It had a few things that needed repaired on it...I am going to look into a solar oven...I really like the idea of it...again thanks

Hi Mary Beth,
Yes I am.
I am taking the oats, putting them in canning jars, putting the jars in the oven at 200 deg. for l hour. Then thanks to Jane answering my question, I am putting the lids and bands on them. This kills any bugs, bug eggs and presurves the oats for further use. Now I can use them alittle at a time as I choose and the rest will wait for me. This can be done to rice and other dry foods that you buy in larger bags and use a little at a time.

OK! I feel better!! I was worried that you were cooking the oats and then canning it in the oven, which I have heard of people doing and it's very dangerous. First off, it doesn't get the food hot enough or under pressure enough to kill the bacteria. Second, canning jars are made for wet heat and not dry heat and so can explode with cooked food in them. And third, the food does not get heated evenly all the way through. You are very smart to divide your oats into jars that way and seal them to keep them more fresh. You can also freeze the oats and vacuum seal them in jars with lids and rings with a Food Saver press. Sounds like you have a plan!!
