Can I join too? I've got 40 pounds to get off. I do love my diet coke from Mcdonalds. I do like most veggies and fruits just don't take the time to get them out and eat them. Im really lacking in exercise. Now its getting colder in Indiana. Did sign for myfitnesspal.com. Free site were you log foods, excereise and water intake. Then lets you know were you are eating to much or to little. |

Salads take quite some effort to make, but if I have one always available, my family will choose to eat it. I do have a great easy recipe for roasted veggies:
Clean assorted veggies like sweet potatoes, onions, bell peppers, eggplant and carrots. I remove the skin from the eggplant and peel the carrots. Slice the eggplant, onion and sweet potatoes in rounds about 1/2" thick. Slice the carrots about and inch long and bell peppers into strips about an inch thick.
Layer everything on a jellyroll pan or cookie sheet. Using about two tablespoons of olive oil, drizzle over the veggies or brush them lightly. Shake sea salt and chili pepper over all. Bake at 425, turning over every 20 minutes until done. It depends on the thickness of the veggies, but it usually takes around 40 to 60 minutes.
Everyone loves to nibble on these. They are great cold, too. It sounds kind of strange, but it is such a good easy dish in the winter when there are fewer veggies available to choose from.
I hope you will try them! marianne |

Thanks for the recipe Marianne. I love roasted vegetables, and my recipe does not include eggplant. And I love the fact that it's great for winter cooking. I tend to only make my roasted veggies in the summer with fresh ingredients from the garden. I am going to the store today, so I will add the ingredients on my list. I already have sweet potatoes and a green pepper. We love to make sweet potato fries (they don't really come out crispy like french fries or roasted regular potatoes, but my family loves them).
I did post the salad dressing recipe on today's blog post (see the link below). I am making another salad today. The kids are still home on break and we are going through a lot of it.
I walked 40 minutes yesterday. With winter here, I may need to visit the gym for my cardio work out (weights etc). I am working on getting up earlier and to bed earlier, so I can start getting up at 4:30am again (the best way for me is early morning workout). We split work the other night, and that was a workout too.
I would like to make the egg dish that MaryJane posted on the recipe of the week too. I don't have the right dishes or canning jars to make it. It's a prefect way to add spinach to my breakfast too. For now, I can just add it to scrambled eggs or omelets. I really miss my garden during the winter. I love to add zucchini and other crunchy veggies to my frittatas.

Wow! Thanks for your posts Kristina! You made me feel wonderful. I am not known for my cooking ability or recipe-sharing, so it is very special to have you enjoy it so much. I am so happy you like it. Marianne |

I exercised around the mall downtown with my daughter. We got home and my daughter said, "you look destroyed." It seemed an apt description of how I felt, so I figured it probably described how I looked, too. TOnight our neighbors are coming over for a very short while for cake and coffee. And I know my hubby and I will fall asleep before midnite, but I will be happy to have 2011 end and get a fresh start in 2012. Hopefully the job market will improve for my daughter!
I have tried to keep up with Pilates this week. I didn't get too sore, so I think I was reasonable in the amount/intensity I did. The way I understand it, you shouldn't be sore for longer than two hours after your workout. So, if you are sore the next day, you went at it too vigorously. Anyone have a different measurement they go by?
Good for you, Kristina. You always feel good AFTER you exercise! So many reasons to avoid it though, isn't there!

I made thirty days in December of eating five fruits and veggies. I hope to continue it. It got easier and easier. I didn't lose weight but I didnt really cut anything out so I am hoping this month to add some exercise and cut out some sweets. I do feel good and even crave veggies now. Never thought I would crave veggies.

Way to go Ruthie!
I did my Pilates routine and I am still not sore ... so I will continue to increase slightly.
Emily, congratulations on making a big lifestyle change. Even without weightloss, you have gained health benefits of increased fiber and vitamins.
Welcome to 2012! Marianne |

Sounds like a great breakfast, Kristina. I am a bit weird I eat my oatmeal at lunch. Steel cut oats with brown sugar -- can't break the brown sugar habit!!
I did Pilates again, so far I've only missed the one day that I went shopping with my daughter (and I maintain THAT was enough of a workout!)
How's the rest of our group doing? I really enjoy getting a pat on the back and giving out "atta girls" for all the progress we are making.

I used to be pretty regular about walking and doing strength exercises but kinda sluffed off. My husband and I were celebrating New Year's Eve at a neighbor's and she and I were casually talking about walking again. Two days later she text me asking if we I would like to start walking with her. So we have committed to power walking every weekday for 30-40 minutes! If we lose weight we lose it...more importantly that we are being healthy and strong! Kristina, I think it's a wonderful idea to encourage one another. I believe that's part of what keeps us on our goals...cheering each other on!

Ruthie, 15 minutes is a terrific start on exercising! Those trips up and down the stairs are gonna get easier really quickly. Way to go!
Robin, Lucky you! A walking buddy is invaluable! Your time will go by so fast and if you are like me, having someone else depending on you to walk everyday will keep you at it. Good luck to both of you. Your goal of just getting healthier is the right idea ... of course, the weight-loss is sure to follow. Such a nice side effect of being healthier and stronger!
Keep it up, girls. We can do it!

I loooove steel cut oats. Yum! I ran out of mine, so I opted for oatmeal. Maybe scrambled eggs and spinach sounds good for today...maybe with onion and green pepper too.
Robin, having a partner is very helpful. Hubby and I are getting back to a 5am workout and we rotate the workout on the machines at the gym. I stopped going when he had to spend months at the hospital with his sister. Having someone to workout/walk with out is a so helpful.
Ruthie, someone told me that starting out in short segments is the best way to not give up on getting a routine started. Too much too fast, she said, may overwhelm you at first.
Last night, I was starving after a very healthy dinner....I opted for a clementine. Yay!

I was browsing through my latest 'puter addiction: Pinterest. And found this........
http://4.bp.blogspot.com/-j2mZsZm-970/TueAdcPVgTI/AAAAAAAAR_g/Cj_Ywu_GblQ/s1600/40.jpg
This gives me great inspiration! I imagine I'm not her age (but who can really tell?) but even if I can look somewhat like her - I'm game.
Which leads me to say that it's a nice day. And - as promised - our barn innards are going to get moved around to make room for my Gazelle. It may not be the most productive piece of workout equipment but it is better than nothing.
I've been doing pretty good about drinking my 64 oz. of water. It gets easier every day and I can tell that it's making a difference in small ways......which adds up to big ways.
I've been getting some good exercise in today. Helped hubby haul a computer desk out to the road. *Free for the taking* and it lasted about an hour or so before I saw a van take it. Yeah! I'm so glad it has a good home.
Then, in its place we brought in from the barn an antique secretary desk. This, along with hanging out clothes (my all time fav thing in the world!) so we can have some clean smellin' sheets to crawl into tonight. Kind of windy here in Ohio but nothing that lots and lots of clothespins won't fix.
Hope all is going well for everyone and that you're succeeding in your weight loss ventures.
Ahhhhh.....it's a beautiful day.

It sure sounds like we are all making good changes. More water, fruit and veggies, oatmeal, stairs, walking ... we've got to see some results by the end of the month. Maybe we won't see them, but don't you agree that we will FEEL them?
I hit the Pilates reformer again today. My diet stays the same and as I mentioned, I'm not really trying to lose weight, but rather to regain strength that I had lost by getting off track on my exercise program.
keep it up! marianne |

I failed to exercise yesterday, so I'm up and ready today. I just have to get another kiddo off to school first. I'm about ready to start back up with my 4:30am wake up call. We had plans to start today, but hubby is sickly.
I didn't eat as well as I should have yesterday for lunch and dinner, but tonight I'm roasting a few of our raised chickens for dinner.
Today is my "all-out" house cleaning day, so I'll be getting a another workout after I exercise. I've started to add free weights too.
My van has not been running since about Dec.21st, so I am extremely limited to getting out of the house (hiking, etc.), when both kids have to work. I think this will force me to get back to the gym a lot quicker. It's the only time we have a car here big enough to take us and a few kids to the gym. Most days, one or two of the kids tends to join us too.
I like the fact that I am getting my "projects" finished, but that also means more time sitting.
Have a great day farmgirls!

Today is my day; started back on the vitamins & healthy eating. Already had 2 glasses of water & a cup of hot tea (no sweetener) & I have only been up a little over an hour. Planning on a walk in a couple of hours...hoping it will warm up a little hear in Indiana today, planning an outside walk as much as I can since the weather is so mild here. I need to lose a good 50 lbs, I have let myself get so out of shape & I am ready to get my energy back & start losing weight. I have been reading all of your motivating words & I plan on being successful this time! |

I've taken a long walk every day for a week - briskly. I always have a large glass of water first thing before my coffee, then a large bottle of water in the late morning/early afternoon - I prefer sparkling water so that's why I drink it bottled. This week I'm going to try to eliminate/limit my sugar consumption - I'm reading labels carefully. I'm going to try that for 2 weeks - I think the sugar is affecting my metabolism and digestion - stay tuned:) Good luck ladies!! Amy Grace

Hi Ladies! I have been doing WW on and off for about a while. I reached my goal but then of course I didn't stick with it thinking I could do it on my own and all the weight came back on. SO, I am at it again. I like the accountability and keeping track of what I eat. I started using the tread mill again. Did 15 minutes yesterday morning and again today. I know it doesn't sound like much but it is a start for me and 15 min makes me break out into quite a sweat so...... I will do it and add time increments as I can. I do feel like I have more energy. I have been doing fruits for breakfast and trying to stay away from starting my day with to many carbs. I don't know if this has been mentioned or not, but for you gals who drink diet soda, it will keep you drinking it because it has addictive properties and ingredients. It will cause you to gain weight in the long run. If you can possibly change over, it is honestly better to drink less of the sugared stuff than the diet. Hoping I can join in to encourage and be encouraged.

Hi everyone!
Sounds like most of us have hit the 15 minute mark on our chosen exercise routine and are increasing slightly now!! How fantastic does that make us?! Pretty darn fantastic.
Plus lots of us are really drinking down the water. Can't imagine anyone saying that isn't a good idea. Yeah!
Let's try to remember that we will probably miss a day of exercise and make some bad food choices, but none of that will be the end of the world. As long as we keep moving forward with our plans, we will do just fine.
Good luck, hope everyone got in a few minutes of moving around and is happy today. You could always do 10 jumping jacks right now! Do we all remember how? lol
