I improvised this in the eleventh hour and served it to my Thanksgiving guests. It was delicious.
Giardiniera salad 1 stalk of celery, sliced thin 1 large carrot, peeled and sliced thin 1/2 red pepper, diced two fist-sized cauliflower florets, cut up into small florets 2 whole garlic cloves, peeled 2 cups water 1/2 c vinegar 2 t salt 1 T sugar 1/2 t oregano 4 sun-dried tomatoes, soaked in water and sliced thin about 10 or 15 small green olives (I used the canned Israeli ones) salad greens olive oil
Cut up vegetables as directed above. Bring vegetables to a boil with water, vinegar, salt, sugar, and oregano. When it comes to a boil, turn off water, add sun-dried tomatoes and olives, allow to steep for a few minutes, then refrigerate until chilled.
When ready to serve, put salad greens in a bowl, put as much giardiniera as you'd like on top, add olive oil and steeping liquid to taste to make the dressing. |
