I often see the word "TAKEN" added to the original topic heading after an offered item is taken. Please tell me how to go back to the topic and add "Taken". Thanks.

You should be able to do that for any topic you started by going to your first post (that started that topic), and above the text for that post, there should be a row of icons. Click the pencil and paper icon ("Edit Topic"). The Subject field should be available to change, and you can just add "Taken" at the end of it.
(You have to be logged in to do all that. You knew that, though, right? Right? Amiright? Am I being annoying now?)
